My husband is mexican....I cook mainly mexican food, and make everything from scratch..mexican AND american.
The things I have made from d. kennedy's books turn out great, but my husband always says: "We don't make THAT kind of food in Jalisco (where is is from)!" However, my husband LOVES what I make regardless of whether he has ever eaten it before.
I can recommend ensalada de chicharrones (really really simple recipe) from her book, as well as pollo en mole rojo sencillo (but I use pork instead of chicken).
Also, try to get an out of print book by ORTHO, of all publishers, called "Adventures in Mexican cooking". It is VERY authentic, and is full of mexican homestyle cooking, from yucatec food all the way up to the norteno style of cooking. You can probably find it on ebay.
If you like complicated stuff, I'd recommend learning to make chicken tamales in banana leaves. It is pretty much a veracruz style tamal, but you really need to spend a day in the kitchen with someone who knows how to make them. Explaining in writing how to make them would be futile.

You didn't mention the level of cooking experience you have, but if you are new to cooking here's an easy one that is a crowd pleaser.
Open Faced Tacos
1 large bag regular Fritos corn chips
1 lb of ground meat
1 package Lawry's Taco Seasoning Mix
1 head of lettuce shredded
1 small white onion diced
1 can sliced black olives
1 16oz package shredded mexican cheese
1 pint sour cream
1 jar of Pace picante or chunky salsa sauce
Brown the ground meat and add the taco seasoning mix per the instructions.
Layer on a plate, a handful of Fritos, a half a cup of the ground meat, the shredded lettuce, a handful of the cheese, a few onions, olive slices and a couple of Tbsp of sour cream. Top with the amount of picante or chunky salsa to taste.

Abondigas soup
its easy
sweat some veg of your choice, I like carrots, onion and zucchini.
Add some stock or broth of your choice,
make some meat balls with ground beef, some rice and herbs and spices...basic ones will do.
add those meat balls to your soup along with some more rice and simmer until the meatballs are cooked though and the rice is done.
garnish with cilantro and serve with hot tortilla's

Verde Spanish Rice!
1 cup of rice
1 bunch frest cilantro
1 bunch fresh green onions
1 can of chicken broth or chicken boullion
1 tsp of oil
1 pinch of salt
1 pinch pepper
1 crushed fresh garlic clove
1 blender
1 saute pan
In blender add, green onions, cilantro and chicken broth, puree
In saute pan, add oil, salt, pepper, garlic and brown the rice over medium heat.
Add green puree and simmer for 20 mintues!!
