Grasshoppers, pig feet--sorry, but these don't really sound appetizing to me--things is they are pretty authentic.

My husband is from Mexico and grasshoppers and pig feet are not authentic Mexican food unique yes. Many countries eat insects, and different parts of the pig. Things that are considered authentic foods of Mexico are:
Mole
Chiles Renellos
Tamales
Tortas
Pazole
Menudo
Tortillas
Refried beans

Pigs feet are delicious.

Enchiladas, burritos, tacos, chile (without beans), flautas, fajitas...my husband is from San Antonio, TX which has a 50% Latino population from Mexico. If you go into a Mexican restaurant down there, those are the foods you'll be served.
I live in Mexico City so we have restaurants with regional food from all over the republic, have you ever tryed ants eggs (mmm) maguey worms, huitlacoche ( black corn) pumpking flower soup or quesadillas, tlacoyos azules (blue corn filled in with chopped pig skin or beans) amaranto with honey called alegrias its a seed full of proteins very good. Every region has its own version of tamales in the north the have them thin and small, in center we have them medium size but in south they even put a hole chicken leg on them. We also eat nopales (cactus) Tuna wich its the cactus fruit, very sweet juicy and full of seeds.
You really need to research this subject as some people can come up with some really crazy ideas. Only one thing I can say is that I have never been able to get any decent Mexican (or Tex-Mex) food north of the Mason-Dixon line.

The problem with the question is what is authentic to Mexico covers an area that ranges from rich coastal fisheries, to lush jungle, to desert ecologies where just about anything is eaten.
I live on the border and we don't eat grasshopper or pigs feet. My crazy white southern relatives eat pickeld pigs feet. Where'd you hear that abot mexican food?
Def. not taco bell. Family owned mexican restaurants usually have the good stuff. Meaning fresh salsa.

Here's a list of many of the foods/dishes I encountered while living in the interior of Mexico:
corn tortillas
frijoles (beans)
arroz (rice)
tortas (sandwiches)
pollo pibil (chicken barbequed in banana leaves)
mole (sauce used with various meats. It is made with chocolate, spices and chiles.
huachinango (red snapper dish)
ceviche (raw fish marinated in lime juice)
picadillo (ground beef dish)
carne asada tacos (flank or skirt steak with onions)
sincronizada (like a quesadilla)
I hope you get to travel around Mexico to enjoy the various regional foods. I love Mexican food!

just remember to take the feet out. before eating
I'm lucky enough to live in Chicago. We have a huge Latino community here, so Authentic Michohuacan or Destrito Federal style cooking is easy to find, so are authentic Puerto Rican Restaurants.
I'd recommend Menudo, a pepper pot like tripe soup. Also good is Seviche--a marinated fish and shrimp dish served like a relish, And Pastor--a kind of barbecued pork. Pickled carrots, with jalapenos, pickled garlic and cauliflower is pretty tasty too.
