What are some good sides with Mexican food?

Here's what's on the menu for tonight:

Chicken enchiladas

With a piece of lettuce, a slice of tomato, and bean dip drizzled over it,

with tex-mex dip and tortilla chips.



What else would go good with this?(:

You might want to "beef up" the salad with more lettuce etc. To the salad add some corn sauteed with diced bell peppers or not too hot chilies. You might also want to have a rice dish (diced some onions and garlic, saute with a bit of oil. Add rice and a bit of ground cumin. Use V-8 or water mixed with a bit of tomato sauce for the water and cook as you would any rice)
how about some fruit. Like a good slice of pineapple.What are some good sides with Mexican food?
Guacamole, mexican rice(you probably have the ingredients around the house), re fried beans, (just blend up a can of good pinto beans in the blender and fry those in some oil.) Sour cream, maybe some appetizers:) Sounds good!! Have fun!
Mexican rice is good. I always think corn goes great with Mexican food (maybe because of corn tortillas :-)). Or get a jiffy muffin mix, but instead of mixing it with milk, add picante sauce. Bake as directed and you have Mexican cornbread.
I love avocado slices and they go well with Mexican food. Spanish rice is good too.
sour cream, rice, corn, if your into really hot stuff try habanerro hot sauce , or if your into the milder stuff tr a Tabasco or jalapeno sauce. if you like hot butt smoky try canned chipolte peppers in addobe sauce or if your not into really hot stuff buy it without te sauce on it. also tequila or a margarita wouldn't hurt unless you have a bunch of kid coming over.

spicy rice
toquitos, mexican rice, tamales, quesadilias, and buffalo wings. either of these are a great side dish.
