Try Vietnamese foods, Vietnamese foods have a few dish that eat with bread but it healthy cause it have a lot of vegetable.
Or cook some thing that have vegetable and let him eat bread with that. Vegetable always good for health. Bread is not bad. Don't buy him any fast food cause fast food is not really healthy.... Keep him away from sweet stuff like candy, soda....

What are you talking about girl? Mexican food is VERY healthy! Salsa, black beans, refried beans, corn tortillas. Just go heavy on the veggies and light on the cheese.
Now, I'm coming down hard on the last statement "I can't make him eat what I cook". What is he eating then? You're right, you can bring a horse to water, but you can't make him drink. But YOU are in charge of whether he gets to eat anything else, and what else is available.

So, you sit your little boy down and tell him you love him and that you are going to prove it by giving him healthy, nutritious food to eat. Then, have him help you. Go through all the cupboards and get rid of anything with any kind of sugar in the first three ingredients. Do this together. Also get rid of your vegetable oil and shortening (replace with olive oil and butter), and white flour (including flour tortillas which can be replaced with whole wheat tortillas, and pasta, which can be replaced by whol wheat pasta. Do not listen to any whining. Then, go to the store, and shop the perimeter, where are the meat, fruits and vegetables are. Tell him you will buy him anything he wants to try as long as there is no sugar in the first three ingredients, and no white flour, and no shortening. Cheese is great, as long as it is real and not processed. No velveeta or 'wiggly' cheese. But let him have some ownership and both of you be willing to try some new things.

I eat a lot of rice. Mix brown rice into the white rice, and add tomato and spice. The brown rice adds fiber and nutrient. My kids will eat mixed rice.
Involve him in the cooking. Ask him what he wants to try to make, have him look up the nutrition information. Let him become an expert and then reward him by making something that he found in a (healthy) recipe book or on line. He might start to have fun doing this.
Also, make him run one mile every day. I just tell my kids to go run, and they run up and down the neighborhood twice (which makes one mile) in less than 10 minutes. This is easy and cheap!

Cook healthy food and don't keep soda in the house. He'll eat what you cook when he sees that's the way it's gonna be. He won't starve.
Traditional mexican food isn't unhealthy, as long as you put plenty of fresh vegetables on the table and don't overdo the breads.
Of course, for a 5 year old it's hard to overdo anything as long as you make sure he's getting meats and vegetables and gets plenty of outdoor running around time.
One thing to keep in mind is that the younger the child the more sensitive the tastebuds, so what may taste bland to you (say, cooked unseasoned spinach or cooked broccoli) may taste very strong to him. Try leaving a little bit by the side when you cook and see if he'll eat it raw. I (personally) still find the flavors of cooked vegetables unappealing and will only eat most of them raw or in stews/soups etc.
And ultimately he'll eat when he gets hungry enough--no one ever starved to death with a plate full of food in front of him. Just don't let him snack on unhealthy stuff.

Calabacita, fideo, and many other Mexican recipes are fairly healthy, none being more fattening than what many Americans consider normal food. Limiting his pan dulce is probably a good idea, but you shouldn't cut him off completely. Maybe one or two a week would be fine. As far as him not eating what you cook...well, he'll get hungry eventually. He's ten and you need to lay down the law. My parents were a big fan of the "this is not a restaurant" line. Maybe you could reward him with a dessert for eating his dinner, something like jello which is low in calories. Encouraging activity will also make him a healthy boy, enroll him in a sport if he's not in one already. It'll foster good exercise habits and social networking.
Almost forgot, limit tortillas to one or two a day, especially if you make them or buy them with lard. If you buy them there are many options nowadays, high fiber, whole wheat, etc, get those instead.
Mmmmm, mexican food. Let him eat the food that you prepare but give it to him in smaller portions and make sure he gets plenty of excersise.
