Easy to make mexican food and drink?

Everybody thinks I cant cook , I want to prove them wrong!Easy to make mexican food and drink?
Spanish Rice, Enchiladas, Re-fried Beans, Guacamole, Mexican Stew, Tacos. You could look at a Mexican Menu on-line and have had your answer right away.Easy to make mexican food and drink?
Two recipes that are always a hit when I have people over:



Chicken Enchiladas

I use flour tortillas instead of corn tortillas, but you can use either one. Basically, you cook 2-3 chicken breasts in a skillet. When they are cooked, shred or dice up the chicken. Add taco seasoning and a little water and mix it together. Then, in the skillet, add whatever else you want like jalapenos, black olives, mexican rice (I use a box of minute rice and add a 2 packets of taco seasoning and 2 cans of chopped tomatoes and green chilis), black beans, etc. After you mix all of that together, add a small can of enchilada sauce and 1 package of shredded cheese. Mix and set aside.



In a mixing bowl, pour in a can of enchilada sauce. Dip the tortilla into the enchilada sauce and put on a plate. Add a scoop if mixture in skillet. fold all sides together and place in a baking dish (use cooking spray so it doesn't stick). Do this until all tortillas are gone. You should get at least 12 enchiladas. Bake in the oven for approx. 20 minutes at 375. Top off with shredded cheese and bake for an additional 5 minutes.



Indian Tacos

Just like the first recipe, make your chicken. Add individual bowls of shredded lettuce, tomatoes, jalapenos, beans, rice, olives, sour cream, etc.



Buy frozen bread loaves. I buy a package of 3 loaves for a few dollars in the frozen bread section of the grocery store. Defrost a loaf in the microwave. Each loaf should make about 5 shells. Cut the loaf in 5-6 sections (depending how big you want them). With a rolling pin (or your hands), spread the dough out into a large circle. After you have done this, fry the bread in a skillet (with oil; turn the skillet onto medium-high). Each side only takes about 1-2 minutes to cook.

Tortilla rollups

Queso (you can add beans, salsa, cheese, and whatever else you want) to eat with tortilla chips

Quesadillas

Fajitas

Nachos with all the toppings



...and for drinks, I'd go with frozen margaritas (some with and some without alcohol)
I have the perfect side dish... everyone loves it



Monterrey Spicy Rice



Cook one cup rice in two cups liquid (either can of chicken broth plus enough water to equal 2 cups or two chicken bullion cubes in two cups water)



Once done stir in 1 can diced green chili's (chilis not jalapenos)



I container sour cream



one bag (about 2 cups) Monterrey jack cheese (or mexican cheese mix)



salt and pepper (no salt of bullion was used)



transfer to baking dish, bake 350 about 35 - 45 minutes, till golden and bubbly





It tasts like a complicated recipe...but very easy. You can even assemble day before and bake the next dayEasy to make mexican food and drink?
How about shredded beef tacos. All you need to do is slow cook a chuck roast for 6 hours or so (use a crockpot or put in the oven with 1/2 cup of water at 325) season with a packet of taco seasoning and serve shredded in hard taco shells with lettuce, cheese, salsa, tomato, etc. Serve with canned black beans seasoned with fresh cilantro. Also, sautee rice, onion, garlic in olive oil. Add chicken broth and cook. This is a yummy, easy, and inexpensive Mexican meal. Enjoy!
I recently started to love eating and cooking mexican food, heres a trick I learned from some locals, adding carrots help stretch meats like ground beef for tacos. Cutting thin slices of carrots on a angle and adding to meat helps cut cost and adds a good taste and texture. Another closely guarded secret ingredient of mexican food is in fact cinnamon. Use your favorite taco seasoning and then add a tablespoon of cinnamon to give it a authentic delicious flavor. Tacos is easy and look impressive once all the topping are out on the table. Try using shredded cabbage instead of iceberg lettuce and cut up some radishes as toppings.

Also a mexican pop you can usually get at your local grocery store is Jarritos, comes in all sorts of flavors and are really really inexpensive.Easy to make mexican food and drink?
Try these two. They actually don't involve any cooking!



1. FRESH RED SALSA



Enough for a large bag of tortilla chips



INGREDIENTS



1 small pack of fresh coriander

1 clove of garlic

1 green chilli pepper

? a red sweet pepper

? an onion

2 tomatoes

1 tablespoon of olive oil

A pinch of salt



METHOD



Wash the coriander and shake dry. Peel the garlic. Cut the top off the chilli pepper, cut it in half and scrape out the seeds. Cut the top off the sweet pepper, remove the middle bit with the seeds and cut it in half. Use half and save the other half. Peel the onion and cut it in half. Use half and save the other half.



If you don’t have a food processor, chop the chilli pepper, coriander, garlic, sweet pepper and onion into tiny pieces. Chop the tomatoes into 5mm (? inch) pieces. Put all of the ingredients into a bowl and mix together.



If you have a food processor, coarsely chop the onion, sweet pepper and tomatoes. Put all of the ingredients into it and process for 1 minute.



Leave for 30 minutes for the flavours to mix.



ADDITIONS %26amp; ALTERATIONS



Use extra virgin olive oil for preference, but normal olive oil will do.



FRESH CHILLI PEPPER WARNING!



When you chop up fresh chilli peppers be careful and avoid getting juice on your hands. If you touch your eyes, mouth or other ‘sensitive areas’, even an hour after chopping them, they will smart and burn. So wash your hands or wear rubber gloves.



2. THREE BEAN SALAD



Serves 2



INGREDIENTS



200g (? of a 400g tin) of borlotti/rose coco beans

200g (? of a 400g tin) of cannellini/white kidney beans

200g (? of a 400g tin) of red kidney beans

1 tablespoon of olive oil

? a tablespoon of lemon juice

1 teaspoon of dried parsley



METHOD



Open the tins. Put the beans into a sieve or colander and rinse them thoroughly under running cold water.



Put the beans into a bowl. Add the olive oil, lemon juice and parsley. Mix thoroughly.



Cover and put in the fridge for at least half an hour.



ADDITIONS %26amp; ALTERNATIVES



Use other beans, like black-eyed beans, butter beans or flageolet beans. If you can find them, use pinto beans, which are the authentic “cowboy” bean. You can even use baked beans, but wash the tomato sauce off first. Use sliced green beans, or broad beans.



You can use chick peas, even though they aren’t beans.



You can, of course, use dried beans. However, they have to be soaked in advance.



Use extra virgin olive oil for preference, but normal olive oil will do. Use the juice of ? a lemon instead of bottled juice. Use chopped fresh parsley instead of the dried parsley.

Add a clove of garlic. Peel the garlic and chop it into tiny pieces.



Add 2 spring onions. Wash the spring onions, cut off the root ends and leaves, peel off and discard any dried up or slimy outer leaves, then chop them into thin rings.



TIPS



Don’t use similar coloured beans together, like butter beans and cannellini/white kidney beans.
