Can someone with colitis eat Mexican food?

Would it do nasty things to their system? Would fajitas be a safe suggestion?Can someone with colitis eat Mexican food?
I wouldn't eat a restaurant fajita, they are fried in oil and the veggies are sometimes hard and that combination can cause cramping, gas, bloating and diarrhea for someone with colitis. If it is made at home, the recipe can be altered to make it more easily tolerated and healthier: the chicken is best baked, broiled or boiled and the veggies are easier to digest if they are steamed really soft and don't put any spices. You could try just one wrapped in a flour tortilla and see how your body tolerates it, but chew really good, eat slow, and just eat a small portion.

Foods to Avoid: White Rice, Ripe Bananas, Peanuts, Alcoholic Beverages, Soft Drinks, Greasy, Fatty Fried Foods, Spicy Foods, Candy and Chocolate.

Tips: Drink lots of water, exercise, avoid laxatives and fiber supplements when possible, and try to manage stress so that it doesn鈥檛 affect your body and its functions.
