What is the difference between texmex food and mexican food?

Texmex food is Mexican food the Texas way. For example, A mexican enchilada is made with tortilla, chicken, with white mexican cheese (queso fresco) and the sauce is made with tomato, either green or red with chile (there's all sorts of chiles). A Texmex enchilada is made with chicken or ground beef, yellow cheese, like cheddar cheese, and the sauce... they use chili!! Like the ones you use for hotdogs.

It's a big difference. I honestly feel insulted when someone tries Texmex and calls it Mexican because it's not. Very different.What is the difference between texmex food and mexican food?
Unlike kjerring, I find that Mexican food in America has at least five types ::

Cheap fast food like Taco Bell. Barely spicy. Cheap quality.

CalMex - lotsa sour cream and guac and cheese. Mildly spicy. 'Nacho'

Mexico City style. European cooking techniques and quality ingredients. Lots of healthy seafood.

New Mexico style - California styled Mex - sorta. Top quality and healthy.

TexMex - Fresh ingredients, Southwestern influence, smokier, liberal use of spices.
