What are the best and easy to make Mexican food to prepare for a party?

i make my taco dip all the time for parties.

1lb ground beef,chuck, sirloin, or round

1 brick velveeta cheese

1 can chili(no beans)

1 8oz jar taco sauce(i use mild ortega)



brown the ground beed, stir in the chili and the taco sauce. heat to bubbling, then put in cubed velveeta and stir til the cheese is melted and mixed in good.

Also having a taco bar would be fun too. You could have hard taco shells and tortillas and then all the fixin's for people to prepare their favorite tacos. Ie. Chicken, beef, shrimp, beans, cheese, avocado, sour cream, guacomole, salsa, tomatoes, olives, onions, etc.

Make a simple taco/burrito bar. make a simple taco meat add all the lettuce tomatoes get some refried beans and salsa just explore the hispanic section of your local grocery and above all have fun with it.
Make as much as you can the day before, that way you aren't working all day in the kitchen and can't enjoy your party! Here is a good recipe...



FAJITA LASAGNA



1 1-lb. box lasagna noodles

2 pkgs. dry Fajita mix

2 lbs. ground chuck

2 pkgs shredded cheese of choice

sliced black olives, optional

green onions, chopped

1 can enchilada sauce

sour cream (optional)

diced tomatoes (optional)



Cook lasagna noodles and drain.



Brown meat and drain off grease; add Fajita mix as directed on back of package.

In a 9x13 baking dish sprayed with cooking spray. Layer noodles, meat sauce, cheese, green onion, olives and Enchilada sauce. Repeat.



Top layer should be cheese.



Bake at 350 degrees for 45 minutes.





MEXICAN CASSEROLE



1 lg. can refried beans

1/2 lb. hamburger

1 lg. onion

1/2 lb. chorizo

1 lg. can mild chili pepper

2 c. Monterey Jack cheese

2 c. med. cheddar cheese

2 c. mild salsa

1 lg. sour cream

3 avocados

Ripe olives

Taco chips



Brown hamburger, onion and cherizo. Drain grease. Cover casserole dish well with refried beans. Spread meat mixture over beans. Spread chili peppers over meat mixture. Spread cheese over peppers. Spread salsa over cheese. Bake 30 minutes at 350 degrees.



Before Serving: Make ring of sour cream in center of casserole. Fill with mashed avocado and top with ripe olives. Line side of pan with taco chips (stand chips on edge around sides of dish).





MEXICAN GOULASH



1/2 pound Lean ground beef

1/2 cup Onion, chopped

1/4 cup Green pepper, chopped

3 cups tomato juice

1 1/2 cup Raw macaroni pasta

1/4 teaspoon Garlic powder

1/4 teaspoon Pepper

1/4 teaspoon Chili powder



Add Macaroni to boiling water and cook for 7 minutes. Cook the first 3 ingredients in skillet until meat is brown and vegetables are tender. Drain off fat. Add tomato juice, macaroni, and spices. You can either prepare all the ingredients ahead of time or hire a caterer. I went to a baby shower a couple months ago and the host hired a caterer. The caterer was actually a friend of the host's mother. If you know anyone who cooks good Mexican food and you don't mind paying some money, then save the time and hire a caterer.
Quesadillas are really easy to make, especially if you own a quesadilla maker, you can buy some Goya mexican rice that all you have to do is boil and whip up some margaritas and your good to go.What are the best and easy to make Mexican food to prepare for a party?
green chicken enchiladas



Ingredients:

Chicken

taco seasoning

diced green chiles

sour cream

green enchilada sauce

cheese

corn tortilla's

onion



cook chicken, mix with taco seasoning, onion, green chile's, and a little bit of the enchilada sauce to moisten.



mix sour cream and enchilada sauce

dip tortilla's into mixture and begin to layer. after done layering pour some of the sourcream/enchilada sauce mixture over the top and cover with cheese.

bake until cheese is bubbly and browning. since your chicken is already cooked it shouldn't take too long.



it's always a hit.
Try quesadillas. Just tortillas, chicken (or beef), and cheese. Put them together and cook on a griddle or in a skillet. Serve hot. Make them plain like that and then provide condiments like sour cream, guacamole, salsa, etc.

This is a great finger food...you can cut them up into little triangles and people can dip them in the condiments.
I am with Erin B.......a taco bar or a fajita bar is the best and easiest.

You can make the meat ahead of time and then just heat up.

Have tortillas, taco shells, lettuce, tomato, onions, grilled onions and peppers for fajitas, sour cream, cheese, jalepenos set out for a "make your own" Then you could have rice and beans.
