Yes, because most college students are the go. And are not willing to sit down ad eat. They are going to want to get a quick meal. Since you are saying the food is going to be authentic it will draw the health crazy people who arent up for McDonalds' fast greasy unhealthy food. Why? They already HAVE Taco Bell. You'd just be competing against them. You'd be just another restaurant.
Also, you'd have to define "Mexican." Inner country, like Guadaljara? Yucatan? Most "Mexican" food in the US, even so-called "authentic" is a riff on Tex-Mex.

It could possibly work very well, as long as your near the campustown bars, and be willing to be open until 3 or 4 am. A friend of mine's mother made a killing by having a sub shop between the bars and dorms and staying open until the wee hours for all the partiers heading home. Just remember that location is key, nobody wants to stumble out of their way, and even renting a smaller space will still work. Yes, it certainly would.People enjoy good food, at sit down restaurants that are reasonably priced.
