one of my favorites is my version of mexican tacos al pastor -- if you never had them go to mexico and get some! Its pork (carnitas) and pineapple tacos with salsa taqueria --salsa taqueria is made from arbol chiles and tomatillos. i can get it in cans in florida at mexican markets. After you try it you will never want any other taco sauce again.Where can I learn to cook authentic Mexican food?

Best, highly authentic, classic Mexican cookbooks, well-written with lots of info on traditional techniques:

* The Cuisine of Mexico - Diana Kennedy

* Recipes from the Regional Cooks of Mexico - Diana Kennedy

I learned to cook Mexican food from the Diana Kennedy cookbooks. It's authentic okay (I've spent lots of time traveling in Mexico).

Also an excellent, highly usable authentic Mexican cookbook: "Cocina de la Familia," Marilyn Tausend %26amp; Miguel Ravago.

Also good: Rick Bayless's cookbooks.Where can I learn to cook authentic Mexican food?
