What and how affects mexican food?

I am doing a food project for school. my partner and i got mexican food. i need to know what things influence mexican food such as geography, how does this affect mexican food and customs? any other information on mexican culture, government, history or religious beliefs would be greatly appreciated!What and how affects mexican food?

First you must decide if it is North Mexico,South Mexico, Pacific Coast, Atlantic Coast foods. All vary just like in the US. North Mexico foods are more like the Tex-Mex we get in American restaurants. Coastal areas use more seafood's. Almost every meal has beans,rice and tortillas. The Yucatan is jungle and they use more jungle fruits in cooking.
