What is the name for that Mexican food dish with sliced jalapenos, onions and carrots?

Normally it is severed with the salsa and chips plus left at the table to be used during the main course. I need to know the name of it and what is the liquid involved, is it water or a pickling juice? Are any spices added to the liquid?What is the name for that Mexican food dish with sliced jalapenos, onions and carrots?
Pickled Jalapenos Peppers



Fresh jalape帽o chiles

Carrot slices (I use whole baby carrots.)

Small chunks of onion

1/2 teaspoon salt per pint

1 clove garlic, minced, per pint

Vinegar and water in equal amounts

Vegetable oil*





1. Prick or slash chiles in several places. Pack into clean pint canning jars. Add a few carrot slices and onion pieces. Add salt and garlic.



2. Cover ingredients with equal amounts of vinegar and water, leaving 3/4 inch headspace. Top with a thin layer of oil (1/8inch). Wipe jar rim clean with a damp cloth. Adjust lids and rings. Seal.



3. Process for 15 minutes in a simmering hot-water bath.(Begin to count the processing time when the water bath temperature has reached 170 degrees F.)

It sounds like just pickled jalapenos, known as Jalapenos Escabeche. Escabeche usually refers to pickled/marinated vegetables.



You can buy that in any supermarket with an ethnic aisle.

Well you kind of just buy those at the store La Costena are really good. It's not really a dish its just jalapenos in vinegar.
I always ask for Zanahorias Picantes and they usually know what I mean.



'Hu wan HOT carro's, Se帽or?' is the confirmation reply I usually get along with a big grin and some extra Chiles Escabeches to go along with. They give me serranos along with the jalape帽os.

I have always called it jalapeno relish (that is what they call it at the restraunts here) and the juice they use is either pickle or vinegar.
