Okay this is what i did for my school, i made traditional sangria, which was great to go along with everyone's spicy dishes. It was also cheap and easy!

Thinly slice an orange and a lemon. In a large bowl mix grape soda (in place of the sangria, since sangria is a traditional Spanish wine) Club soda (or sprite) and orange juice! Easy and sooooo good! Spaniards drink with most meals! For my Spanish project I am making Mexican food easy cheap recipes?
Well for an easy authentic meal try just making classics like enchiladas, tacos, burritos, gaucomole, salsa. You could buy a rotisere chicken and add mole sauce. A typical spicy sauce in mexico. (i know you are making this for 11-13 year olds and I am 12 and i love these foods!)
Try making churro. Its really good and easy to make. And you can make it anytime you want to because its more like a dessert i guess you could say. :)
you should go check allrecipes.com

here's the link to the mexican food page.

Mexican rice is pretty easy, if you are allowed to use the stove. You just pick up a mixed packet at the store, and add water :)

You could also make a chip dip, by adding taco mix to sour cream. That's really easy, and you can garnish with fresh vegetables (like shredded lettuce and tomatoes). Everyone loves a good taco dip :)
