Well, I'm Mexican and most of us are Catholics so during Lent we have to give up something and most of us choose BEEF. Otherwise, we usually cook and eat almost everything from plants to countless animals.For Mexicans and ppl who have knowledge about Mexican food?
Not ALL Mexican foods are welcomed with open arms. Foods such as Mole' (moe-lay) chicken covered in a thin Mexican chocolate sauce.
Menudo (meh- noo- doe) a soup made from hominy (white corn) and tripe(cow intestines).Oh by the way incase of a hangover,get yourself a bowl of menudo to sober you up and settle the stomach.
When the Conquistadors of Spain arrived in the New World,the Mexican Indians were treated harshly by the "Patrones" (pah-troe-nes),the land owners who would take the cattle tended by the peasant Indians and get the best cuts of meat for themselves.
The Indians were left with scraps. THAT is where the use of MAIZ(corn) in the Mexican diet comes in. Out of necessessity the Indians created foods such as ox tail soup,tamales,gorditas,caldo(cahl-doe) a soup flavored by beef soup bones.For Mexicans and ppl who have knowledge about Mexican food?

Jared, Taco Bell....Ain't Mexican...nor is Taco Tico or any of the thousands of 'chain store' mexican joints.
Mexican is as healthy as you want to make it. You can make thousands of dishes with chicken or fresh seafoods or lean cut beef and pork.
Or you can get the greasy hamburger meat tacos at Taco Bueno...
McDonalds....Now THAT is unhealthy....Dunkin Donuts....KFC....
