Any mexican food that might be different to eat?

I need to know some mexican foods where you don't just take a bite out of it, I mean things like having to remove a part then do something to it, or peel off the shell and leave the head and tail ectAny mexican food that might be different to eat?
I know for a fact that in our heritage we cook pigs head , and cow heads . These are done when you make a delicacy such as tamales , the head is cooked and you have to scrap all the meat off the skull in order to get the meat . Then its cooked separately in ingredients to do the dish your making. The cow is made the same but it also contains the tongue to be cooked separate and when well done , Cut the tongue open and peel off the meat this is eaten w/ flour tortillas (this is a expensive dish ) sold at stores here locally on Sundays (beats me why only that day). You should try it , its delicious.As for having a different kind of food to peel off and shell thing , that is usually found in Tyland where they sell alot of freaky food such as rats , roached , etc . and that would be interesting to taste .

The only thing i know of is when you eat tamales you take the tamale off of the corn husk before eating. It sounds more like philippino food like balut
