What is your definition of good Mexican food?

Is it about the quality of ingredients? Is it about the Texas influence? Is it about how cheap you can eat? Is it about experiencing great flavors that say ole with recognized proteins? Or are the margaritas the most important?What is your definition of good Mexican food?
It's all about authenticity. Tex-Mex is not authentic and is pretty unhealthy so I stay away from it. Love to find little hole-in-the wall Mexican places where the food is good and cheap. There's an amazing Mexican seafood restaurant here that is not fancy, but extremely yummy and I think my boyfriend and I are the only white people in the whole city who eat there.What is your definition of good Mexican food?
Is it about the quality of ingredients? - usually fresh ingredients. food is not usually prefab, but home made from scratch

Is it about the Texas influence? - we influenced Texas cooking not the other way around

Is it about how cheap you can eat? - actually food is expensive in Mexico and everywhere else these days

Is it about experiencing great flavors that say ole with recognized proteins? I don't understand

Or are the margaritas the most important? Margaritas are for tourists



My definition, finally - made from scratch with fresh ingredients, not made in a hurry, Mexican food is usually very greasy because it's mostly about meat but I like it not too greasy, needs a good flavorful hot sauce that is not overly agressive immediately but rather builds up as you eat.
It's all about what you personnel taste is. If you like it then it's good. How do you define "mexican food" Is it from Mexico, cooked my someone form mexico or the use of Mexican Spices. The best sushi I ever had was in San Diego where the cook was from Mexico or mexican if you prefer.What is your definition of good Mexican food?
Homemade. There is NO other definition. You go to all the restaurants around and eve though they say "Authentic Mexican Food", it's not, it is still Americanized. Tex-Mex has nothing to do with Mexican food.
Its the atmosphere while your eating. The restaurant i go to has a band that comes and plays customized songs to every customer. ALso, it has to be made by mexicans and they have to use corn tortillas and not flour. ALSo it has to be Caliente!!What is your definition of good Mexican food?

The great flavors or else have a few Margaritas before you eat.

if you would have said authentic i would have said puking it up afterwords but for your question i really don't know
for me its all about the beans, if the beans arent good then i wont be back
