What is a good side dish (not rice) for mexican food?

I am makeing this mexican lasagna thing. what would go good with that?

It has to be simple and quick, i only have about 20 mins to cook.What is a good side dish (not rice) for mexican food?

Pablanos and Cheese:

This is more of an appetizer.

INGREDIENTS

鈥?4 fresh poblano chile peppers

鈥?2 cups oil for frying

鈥?8 ounces queso asadero, you can substitute Monterey Jack

鈥?1/2 cup all-purpose flour for coating

DIRECTIONS

1. Rinse the poblano peppers, and remove the stem and core. Remove any remaining seeds. Heat a heavy skillet over high heat. Place peppers in the skillet, and cook until blistered and blackened. Turn frequently to blacken all of the skin. You want to make sure that no part of the pepper remains crispy. Place the peppers into a paper bag, fold the top closed, and let the peppers steam for a few minutes to loosen the skin.

2. Heat about 1/2 inch of oil in a large heavy skillet over medium-high heat.

3. Rinse the peppers under cold running water to remove as much of the black skin as possible. Don't get prissy about it; you can eat the skins, even if they're black - most people like some of the black skin. Next, WASH your hands well with soap and water, or you'll be sorry later when you touch your eyes or mouth.

4. Insert a nice thick piece of cheese into each pepper, and secure the opening with a toothpick. Coat the peppers in flour. Gently place the peppers into the hot oil, and reduce the heat to medium. Fry for 3 to 5 minutes per side. Don't try to turn them over until the bottom has a firm crust on it. Try to avoid letting the cheese run out. When both sides are slightly browned and the coating is firm, remove from the pan, and drain on paper towels.

Variations

In addition to the cheese, crisp bacon slices and/or 1/2 cup of well browned chopped onion. They're delicious without either, though. Try them plain first.

If you're in a hurry, you don't even have to flour and fry them; just put in the cheese and return them to a pan with a bit of oil in it, and cook them till you know the cheese is melting. That's good, too. The coated ones are simply better. If you wanted to get more elaborate you could dip the peppers in beaten egg and then the flour, for a puffier, more substantial crust. Not necessary, though.

Cheese Notes

Queso asadero is a type of Mexican cheese that melts well. You can substitute any mild, melty cheese. You can substitute Monterey Jack cheese.



Sweet Corn Tomalito

It's kind of like a steamed corn -pudding mixture - you can make on the stove top.

INGREDIENTS

5 tablespoons margarine, softened

1/4 cup masa harina

1/3 cup white sugar

1/2 cup water

2 cups frozen whole-kernel corn, thawed

1/2 cup cornmeal

1 teaspoon baking powder

1/2 teaspoon salt

4 teaspoons milk



DIRECTIONS

In a medium bowl, mix together the margarine, masa flour, and sugar until light and fluffy. In a food processor or blender, blend one cup of the corn kernels with the water and cornmeal just until smooth. Stir into the masa mixture. Mix in the remaining corn, baking powder, salt, and milk until the batter is smooth. Pour into an 8x8 inch glass baking dish.

Place the baking dish over a large saucepan of simmering water. Cover the baking dish tightly with aluminum foil, and steam for 50 to 60 minutes, or until firm. Check water occasionally, and refill if necessary. Stir pudding before serving to give it a consistent texture. Serve in small scoops.What is a good side dish (not rice) for mexican food?
Margarita Fruit Salad



1 small cantaloupe, scooped into balls or cut into small pieces



1 small honeydew melon, scooped into balls or cut into small pieces



2 small oranges, peeled and sectioned



1 grapefruit, peeled and sectioned



1 mango, peeled and diced



2 C. strawberries, hulled and halved



1/2 C. granulated sugar



1/3 C. orange juice



6 Tb. Tequila



6 T. orange liqueur



3 T. lime juice



1 C. unsweetened coconut flakes, toasted



Combine cantaloupe, melon, oranges, grapefruit, mango and strawberries and set aside.



In a small saucepan heat the sugar and orange juice over medium heat. Stir for 3 minutes or until sugar dissolves. Stir in tequila, orange liqueur and lime juice. Let cool.



Combine with fruit.



Refrigerate for at least two to four hours.



Just before serving sprinkle with coconut.



Serves 8 to 12.
A corn salad is quick. 1 can whole kernel corn, drained. 1 can black beans, drained and rinsed. 2 medium tomatoes, seeded and diced. 1/2 cup diced purple onion (or any sweet

onion or green onions whatever you have) The dressing is a small amount of mayo, like 2 tbsp, a couple teaspoons lime juice, salt and pepper and dried or fresh chopped cilantro. It'll take you 5 minutes, beginning to end.What is a good side dish (not rice) for mexican food?
maybe some warm tortillas on the side , I would say some beans but i dont know if that would be good with lasanga .. you can also put a small plate in the middle of the table with some olove oil and balsimac vinegar .. and fresh bread to dip it in , its really good
when i was in mexico, i stayed with an amazing family, and they always served soup with a meal. my favorite was tortilla, but they also made a great zuchinni one...all were slightly spicy. they also served a sort of lettuce with just shredded lettuce and carrots with a cilantro ranch dressing.What is a good side dish (not rice) for mexican food?
with something heavy like that you want to make a salad. lettuce totamo cucumbers and some onion rings for decor.// or fresh salsa. like pico de gallo. (tomato,onion chile verde serrano, cilantro, salt n peppa, all chopped up and tossed with a squeeze of lime) and voila !
a simple tomato and cucumber salad with lots of fresh cilantro, if you have it on hand. you can make a dressing with olive oil, lemon/vinegar, and any spices you want. yum!
I would suggest a salad of your choosing.

Salad is good with everything.

Another suggestion is guacamole dip with raw vegetables. The dip is a Mexican dip.
nachos, just the get chips from the grocery store, toss in the jalapeno peppers and cheese or maybe some diced tomatoes and you are set
Make a really tasty salad with plenty of fresh vegies, or you can make beans. Your choice. Good Luck.
simple salad goes good with any spicy food!! You can never go wrong with a good salad.
Do some tortilla chips and a dip. ethier guacamole or queso or salsa. itsextremely easy and good.
coleslaw : add some chopped cilantro and shredded jicama (if you have it) ........ sliced oranges ..... sliced avocados %26amp; tomatoes

Beans are pretty quick to cook.
Refried Beans.
guacamole .. pico de gallo!
Have a nice tossed salad with lots of veggies and a fresh dressing.....lite Ranch or Green Godess.
why dont you make some beans there easy to cook and it only take a few minuets
