What are some great Mexican Food recipes?

I need some great saturday night recipes. Mexican Food Night. Any good recipes that I can easily make? I was looking for tacos, guacamole, and any other funky foods. I need a desert too. Also, a drink. If you can give me the best detail and the most recipes you'll get best answer for sure!!They must taste good, and be "home-style". If you have a tip or twist to add post that too. Chile rellenos are NEVER made from jalapeno peppers, but from either poblano or Anaheim chiles which are milder in flavor.



Chiles Rellenos: Chiles rellenos are made of Chile Poblano (Ancho) or Anaheim chiles, with skins removed, dipped in batter, stuffed with cheese or meat and covered with lightly spiced red sauce. Blistering fresh chiles is one of the tricks of the Mexican food Cooking.



Tips for filling Chiles Rellenos



Fillings can be made ahead of time and refrigerated, then brought to room temperature before stuffing chiles.

Recipe Ingredients:



6 Ancho, Pasilla or Anaheim Chiles - or - 27 oz. can Poblano Peppers or Mild Whole Green Chiles

1/2 pound Monterey Jack cheese, thinly sliced

1/4 cup Flour

6 Raw eggs (separated)

2 cups salsa verde

2 cups Homestyle Mexican Salsa

1 cup Corn oil

Salt

Recipe Instructions:



1. Rinse the chiles.

2. Preheat your oven to broil.

3. Place the chiles in a 9 x 14 baking dish and place on the top shelf of your oven.

4. Watch and listen closely. When the skins start to make popping sounds and to char and turn black in places, take the chiles out and flip them over. Be sure and use a potholder so you don't burn your hands!

5. When both sides are fairly evenly charred, remove them from the oven.

6. Wrap each chile in a moist paper towel or place in a sealed plastic bag to steam.

7. After a few minutes, check them. Once the skin comes off easily, peel each chile.

8. Cut a slit almost the full length of each chile. Make a small "t" across the top, by the stem. Pull out fibers and seeds (this is where the heat is) and replace with a slice of cheese. You can set these aside, for a few minutes or a few hours if you put them in the refrigerator.

9. Whip the egg whites at high speed with an electric mixer, until stiff peaks have formed.

10. Heat the oil in a skillet until a drop of water sizzles when dropped into the pan.

11. Beat the egg yolks with one tablespoon flour and salt. Mix the yolks into egg whites and stir until you have a thick paste.

12. Roll the chiles in 1/4 cup flour and dip each one in the egg batter. Coat evenly. Fry, seam side down on both sides until golden brown. Place on paper towels to drain.

13. Meanwhile, heat the salsa in a medium saucepan (either one or some of each). Place one or two Rellenos on each plate and pour salsa over them. Serve them immediately and brace yourself for major compliments!

INGREDIENTS (

2 (7 ounce) cans whole green chile peppers, drained

8 ounces Monterey Jack cheese, shredded

8 ounces Longhorn or Cheddar cheese, shredded

2 eggs, beaten

1 (5 ounce) can evaporated milk

2 tablespoons all-purpose flour

1/2 cup milk

1 (8 ounce) can tomato sauce









DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.

Lay half of the chilies evenly in bottom of baking dish. Sprinkle with half of the Jack and Cheddar cheeses, and cover with remaining chilies. In a bowl, mix together the eggs, milk, and flour, and pour over the top of the chilies.

Bake in the preheated oven for 25 minutes. Remove from oven, pour tomato sauce evenly over the top, and continue baking another 15 minutes. Sprinkle with remaining Jack and Cheddar cheeses, and serve
chicken enchilada casserole



you will need chicken breast, corn tortillas, shredded cheese, enchilada sauce



cook the chicken

heat up some oil in a pan

dip tortillas one by one in hot oil and then dip em in the red or green enchilada sauce

start to layer em



one layer of tortilla

one layer of shredded chicken

one layer of shredded cheese

repeat the layers over again as much as you want

then finally top it off with more enchilada sauce and chopped green onions and more cheese.

throw it in the oven until cheese melts.



for a drink:



chop up some canteloupe, throw in blender

once blended put it in a jar as if you were gonna make kool aid

fill it with water add sugar and canteloupe then mix it well

theres your mexican drink Agua de melon.

why dont you make "chiles rellenos" wich is a giant jalapeno stuffed with mozarella cheese and coverd with whipped up eggs.look it up if you dont get what im saying.

For a mexican style drink you can make Tequilla and squirt. Salt the glass and add a wedge of lime.

Chicken Tacos

Boil chicken then shred. Add chopped green onion, salt and pepper to taste.

Add vegitable oil to frying pan (enough to fill the bottom- you may need to add more as you go).

Place meat in a corn tortilla fold in half. Holding the tips of the tortilla dip and hold the folded part in the oil untill the tortilla has hardened in the shape a bit (should take less than 1 min). Then tip over and fry both sides of tortilla. Place on a paper towel to drain any unwanted grease. Top with your favorite veggies.

A great non-spicy sauce is a tomatoe/oregano sauce.

Boil roma tomatoes about 4 of them. Once boiled add to blender with about 1/2 to 1 cup of the boiled water, a cube of chicken bullion, some salt and a bunch of dried oregano leaves. Blend and taste add more oregano as needed. The sauce should be very runny. Store in fridge to cool down and drizzle over your chicken tacos! Amazing!



Guacamole-

3 Avacadoes

1 Roma Tomatoe

1/2 red onion

1/2 Cilantro bunch

1 Jalapeno

1 Lemon

Salt/ Pepper/ Cumin



Scoop avacado out of shell and mix it till its mashed. Add all chopped veggies to it. Mix. Add lemon/ Salt/ Pepper and Cumin all to taste.



Immitation Crab Ceviche

1 Bunch of Cilantro

3 Roma Tomatoe

2 Jalapeno

1 whole red onion or (half red onion and a bunch of green onion)

1 Cucumber

2 Avacados

4 Lemons

1 Packet of Immitation crab (no need to cook it)

Cut all veggies in a big mixing bowl shred the immitation crab in with veggies. Add lots of lemon. Salt and pepper to taste. Serve cold on a tostada shell! Can add some tapatio or other chile sauce for more spice.
