Nothing like a bowl of nacho chips and some salsa/cheese sauce (preferably cheese sauce!). Quesadilla are EXTREMELY easy to make, and I should know because if I can make it, you can too.
Get any leftover chicken/beef/pork that you have, lots of cheeses and possibly some green onions, then some tortillas and layer those. Grease the oven well before you do it and, because I made it in a toaster oven, put them on a small, flat pan covered in non-stick foil.... bake till golden brown. Serve with some spicy salsa, prefferably (!).

STUFFED JAPLAPENO'S
10 or 12 peppers cut in half, seeded and membranes removed
1 lg. pk. creamed cheese
1 roll James Dean Original sausage
Fry up the sausage braking in to small pieces ( smaller the better), drain
In a bowl mix the cooked sausage and cheese together
Stuff pepper halves
cook in 350 oven for 30 mins
I love enchiladas and if you get the sour cream from mexican stores its really good fry the corn tortilla and do shredded chicken and cheese cook with enchilada sauce on top and cheese and if you want have lettace and tomato as an option for the top
go out and and buy a cheap *** can of pinto beans. Microwave it for about a minute.
