Realy authintic mexican food recipes?

I looooove mexican food!! Really spicy too. I really like chicken fijitas, and enchaladas!! If any one has a really good recipe for either of these foods would be really really great. Also if any one has a good salsa recipe (thats authintic or spicy) would be great also!! thankyou!!Realy authintic mexican food recipes?
Green Chicken Enchiladas



Bonless skinless chicken - either white or dark whichever you prefer

1 jar Heinz Chicken Gravy

1 can Green Enchilada Sauce

8oz Sour Cream

Corn Tortillas



Boil chicken until done using whatever you want to season (I use chopped onion, fresh

jalapeno, garlic, salt and pepper)



While that is cooking mix together your gravy, sauce and sour cream.



When chicken is done, let cool a little and put in a chopper to chop it up.



You need to soften the tortillas in hot oil. Do not let them get hard. You are just putting

them in there long enough to make them bubble.



Spread some of sauce on tortillas - not too much - then add chicken.

Roll them and place them in a baking dish with seam side down.



After your pan is full, spoon some of remaining sauce mixture on top of each enchilada -

but don't make them soggy.

Sprinkle with cheese and bake at 350 for about 35 minutes.Realy authintic mexican food recipes?
Chicken enchiladas...



4 chicken breasts

cilantro (about 1/2 cup)

salsa (any temp about 1 cup)

green onion

garlic minced to taste

tortillas

cheese (pepper jack Cheddar, or Colby jack)

1 can enchilada sauce



dice chicken and pan fry until done

add cilantro, green onion, and salsa Saute for 15 minutes



Fill tortillas with chicken and cheese, roll and place in glass pan (13/9 pan) cover with the can of sauce and cheese, cover with aluminum foil and bake for about 45 minutes @ 350 degreesRealy authintic mexican food recipes?
ENCHILADAS



1 bag chili anchos

4 tsp. garlic salt

Flour tortillas

Shredded Cheddar cheese

Chopped onion

Meat (optional)



Tear the chili anchos open and pull out all the seeds. Boil chili anchos for 20-30 minutes When they are done, the skin will pull away from the chili anchos and I try to pull most of the skin out and throw away. Strain then put chili anchos in a blender and fill the blender up with tap water. Blend water, peppers, and add 4 teaspoons of garlic salt.

Take a flour tortilla and dip it in the sauce on both sides. Fry tortilla in a dab of oil for a few seconds one each side to make the sauce stick to the shell better. Stack them on a plate. Add cheese, raw chopped onions and meat if you want (hamburger, pork or chicken, cooked), and roll up like a burrito. Warm covered in oven or microwave. Left over sauce can be frozen for next time



CHICKEN FAJITAS



1 green and or red bell pepper, sliced in strips

1 onion

3 whole chicken breasts, skinned, deboned %26amp; sliced in strips

Fajita seasoning

1 lg. pkg. flour tortillas

Sour cream

Cheddar cheese

Hot sauce



Remove tortillas from package and place in aluminum foil. Fold foil tightly around tortillas. Do not add water. Place in 350 degree oven to warm for 15 minutes. While tortillas are warming, heat a small amount of cooking oil in skillet. Cook chicken over moderate heat until 1/2 done, approximately 7 minutes. Add green and or red pepper and onions. Continue cooking over moderate heat until done. Serve with tortillas. Add sour cream, sliced cheddar cheese and a dash of hot sauce on top of each fajita, if desired.
