Current Mexican food is the result of the mix of Prehispanic Food from different ethnias living in the Mexican territory, and the Spanish foods. Spanish foods were a mix of Middle Eastern, African and local Spanish produce (Spain was under the domain of Mores for eight centuries, and also received the benefits of the Route of the Commerce of the West Indias and is very close to Africa, just crossing the Strait of Gibraltar). Mexico gave the world Tomato, Chocolate and other local spices. One example, Mole, contains Prehispanic ingredients, corn tortilla, chiles, seeds, chocolate and European ones, bread, nuts (almonds, hazelnuts, sesame) and turkey (prehispanic), pork (european) or chicken (not beef).

Sugar was brought to Mexico from Africa, where sugar cane comes from. Same the architecture, music and costumes, Mexico is a sincretism of cultures, flavors, sounds and images.

I hope it helped you.
are you asking about the ingredients used or what cultures are involved in Mexican food
Spanish would be one because Mexicans originally came from Spain. The other would probably Incan as they were the natives of Mexico before the Spaniards came.
