Huevos Rancheros Verdes

1 1/2 cups (packed) fresh cilantro leaves

3/4 cup diced peeled avocado

1/2 cup chopped onion

2 tablespoons fresh lime juice

4 teaspoons minced seeded serrano chilies

2 garlic cloves

1 teaspoon ground cumin

3 tablespoons (or more) butter

4 corn tortillas

8 large eggs

1 1/2 cups (packed) grated Monterey Jack cheese (about 6 ounces)

Preparation:

Cook tomatillos in large saucepan of simmering water until soft, about 20 minutes. Drain. Transfer tomatillos to blender; add 1 cup cilantro, avocado, onion, lime juice, chilies, garlic, and cumin; puree. Season with salt and pepper.

Melt 1 tablespoon butter in large nonstick skillet over medium-high heat. Add 2 tortillas; cook about 1 minute per side. Transfer to baking sheet. Repeat with remaining tortillas, adding more butter to skillet as necessary.

Melt 1 tablespoon butter in same skillet over medium heat. Crack 4 eggs into skillet. Cover and cook eggs to desired doneness. Sprinkle fried eggs with salt and pepper.

Using spatula, place 2 eggs on each of 2 fried tortillas. Repeat with remaining eggs and 1 tablespoon butter. Top eggs on each tortilla with 1/4 of sauce and 1/4 of cheese.

Using spatula, return 2 huevos rancheros to same skillet. Cover and cook over medium heat until cheese melts, about 3 minutes. Transfer to 2 plates. Repeat with remaining huevos rancheros.

Sprinkle with 1/2 cup cilantro and serve. Makes 4 servings.

Well if you want to make your own mexican breakfast, try breakfast quesadillas. Go to www.foodnetwork.com and look up that recipe. It looks delicious! And i imagine the prices are about the same.Is mexican food cheap? What's for breakfast?
It depends. If you go to a really nice Mexican restaurant (like Abuelo's), then it's cheaper to get a burger. If you go to taco bell then it's cheaper than American food. I really don't know what you mean. Are you from America? For breakfast there are tequitos or breakfast buritos idkIs mexican food cheap? What's for breakfast?
It is really cheap if youre in Mexico... but if you are not then some stuff could be really expensive..

We usually have scrambled eggs with grenn sauce ( you can put either turkey, sausages, bacon, chorizo) and of course some tortillas ;)

Green sauce recipe:

Boil 5 Tomatillos (green tomato) .. when they are boiled then blend them with

1/2 small onion

2 cloves of garlic

1 tbspoon chicken broth

After blending put the sauce in a small pot and boil for about 10 min ( put salt and pepper)

Enjoy!!
There's no such thing as a breakfast burrito or a quesadilla w/ eggs, these are entirely American inventions and crap if you ask me.

Mexican food is pretty much the same all day long, there are always going to be beans and tortillas, and rice most of the time as well. Eggs are usually involved at breakfast time, but are eating all day too.

Chile rellenos, chilequiles, chorizo and eggs, huevos rancheros, etc.

The ingredients are extremely cheap because nothing is required out of a can, which is where extra costs come in. Fresh beans and salsa are much better than canned poo.
