I think you should be Border Patrol officer .

You already have serious motivation to stop intruders crossing our border .I think mexican food gives me diareeha but I eat it and have to dump less than an hour later...is it the food?
It could well be a food intolerance you have or an actual food allergy**, but either one would be a reaction only to a particular food or kind of food, not to an entire cuisine --e.g., Mexican.

It would have been much better if you'd said exactly what you ate since some of the most common intolerances or allergies could seem somewhat obvious to answerers, etc.
Btw, intolerances often create intestinal problems, where allergies may or may not do that but they do often create stomach problems and usually also cause some kind of rash, swelling, difficulty breathing, or something similar.
Also, intolerances often depend on how much of something you've eaten (eat less, suffer less), but allergies may not.

Since you didn't say what you'd eaten, I'd say that some common intolerances and allergies in the kind of Mexican food you're likely to have eaten would be:
...milk products like cheese, and perhaps sour cream
...beef that "hasn't been cooked a long time" --like most of the ground beef, e.g., in tacos, or like beef fajitas, etc (long-cooked "braised" beef isn't usually as much of a problem)
...corn (tortillas, chips, etc)
...wheat (or the gluten in wheat)
...tomato products

Since oftentimes "Mexican" food from restaurants is quite fatty too, you could be having a problem with your gall bladder or with Crohn's disease, etc....too much fat will usually lead to diarrhea.

If you're eating it very hot and spicy, it could be that bothering you too though that would usually show up as a stomach problem (acid stomach or acid reflux) and maybe "burn-y" poop, not actual diarrhea I don't think.

Here's a bunch of info on food intolerances and allergies:

...And if it's the lactose in many milk products that gives you trouble, check my answers here too:

It's also possible you're eating at a place where cleanliness standards aren't sufficient and getting a bit of food poisoning at that place. If others ate the exact same things you did though and didn't get sick, that makes it less likely though not impossible (since people can react differently).

In a perfect world where everything is working right in your body, bowel movements following a meal are very common.
