Whats an easy to make and good tasting mexican food recipie?

im a guy and i have to cook something for my spanish class, any ideas on a food thats easy to make and tastes good?

and we cant do like beans or tacos, we actually have to cook a dish.

In a Sause pan: 1 can stewed tomatoes (they're already cooked and garnished). One half teaspoon tabasco sauce (ONE HALF TEASPOON) 1 large potato, diced. 1 small can of kidney beans (red or white). OR if not beans, 1 small can of peas. 1 quarter cup of cooked rice. 2 filets of any fish. (cut into 1 inch squares) Any fish. Not salmon. One quarter cup of water. Put flame on medium. Cook for 15 minutes. Place in serving dish and sprinkle with parsley or celantro. Salt %26amp; pepper as needed. Looks long but very easy. Fish cooks fast. Only pain in the neck is the rice. Good Luck.
