What is a good mexican food to make?

Please help! I am having a fiesta in my spanish class tomorrow and I am looking for something quick, fairly easy, and tasty to make. Any ideas? Recipes w/ ingredients listed would be greatly appreciated. Thanks!What is a good mexican food to make?
Mexican Layer Dip:

1 can refried beans

1 can diced tomatoes or fresh

1 layer guacamole

1 layer onion or green onion

1 layer sour cream

1 layer shredded cheese

black olives and green onions for decor and color.

Begin with the refried beans on the bottom of a square casserole dish and follow with a layer of each of the described ingredients. Serve with tortilla chips. Very quick and easy. Can be premade and refrigerated for later. Have fun!What is a good mexican food to make?
Taco dip

8 oz sour cream

8oz of cream cheese

Taco seasoning 1/2 packet

shredded lettuce

diced tomatoes

Blend together cream cheese, sour cream, and taco seasoning and spread onto plate. Put the rest of ingredients on top and serve with chhese flavored chips. i always get the generic version of dorritos
Taco salad is easy. Bring a jar of salad olives. A bag of shredded cheese, a bowl of black olives cut small, cut green peppers, shredded lettuce, and hamburger with taco sauce. 2 cans medium black olives chopped

1 onion chopped

3 or 4 cloves of garlic chopped

2 cans of Rotel

1 can chopped peeled green chili's or if you want it hot, use jalpeno's

1/4 cup oil

3 teaspoons balsamic vinegar

Quesadillas.



CHICKEN QUESADILLAS



12 ounces cooked chicken breast halves

2/3 cup shredded monterey jack cheese

1/4 cup finely chopped green onion

8 (8") flour tortillas

1 cup salsa

1 cup sour cream



Combine chicken and salsa in bowl. Divide chicken mixture, cheese and green onions evenly among 4 tortillas.

Cover with remaining tortillas. Heat one tortilla stack in large skillet over medium heat for 2-3 minutes.



Turn tortilla over and repeat for another 2-3 minutes or until cheese is melted. Repeat with remaining tortilla stacks.



Serve with sour cream.

I am a big fan of enchilada casserole, it is fast easy and very good.



Bring along some hot sauce (Tapitio if you can find it where you are).

Beef or cheese enchiladas

This is what we like in our house and if you don't want the meat then remove that step.

Take about 2 pounds of hamburger (or one pound of only for 1-2 people) and cook it in fry pan.

At the grocery you will find cans of enchilada sauce in the mexican food area. Buy mild or hot depending on your taste.

Add about 1/2 to 3/4 can to meat and add about a 2 handfuls of shredded cheese and mix over low heat. Then take corn tortillas and fill with mix. You may need to use toothpicks to hold tortilla together as corn tortillas break easily. Put in cake pan or whatever you have and then poor the rest of the sauce over the enchilladas and sprinkle cheese over the top. If you don't want meat and just cheese then poor the cheese inside the tortilla and fold as in earlier directions. Bake at 350 for 15-30 minutes depending on your oven. Just watch for the cheese to melt and the tortillas to get slightly crisp on ends. Also if you want a little more flavor in the meat, buy a packet of burrito seasoning and add it to the meat as per the directions on the packet. Depending on your taste you can add other ingredients to the enchiladas. You can add black olives, chives, onions, peppers, etc... Serve with guac and sour cream and refried beans and/or spanish rice. Also if you don't like corn tortillas feel free to use flour but keep in mind that they are usually more filling than corn tortillas.
You didn't say how many you had to feed or if you have to serve something hot or cold, but here's two easy suggestions.



Enchiladas:

Flour or Corn Tortillas

Ground Beef

Envelope Taco Seasoning

Grated Cheese

Jar Enchilada Sauce

Brown ground beef in skillet with taco seasoning; drain grease. Warm tortilla in microwave to soften, spread about one tablespoon of enchilada sauce on surface and place a line of ground beef mixture about two inches from edge and roll up. Place seam side down in a baking dish. When all are finished, sprinkle top of baking dish with the grated cheese and cover with rest of enchilada sauce. Heat in a 350 degree oven 20 to thirty minutes to heat through and melt cheese. Enjoy!



Guacamole:

Avocados

Lemon Juice

Chopped Tomato

Finely Chopped Onion (optional)

Garlic Powder (optional)

Finely Chopped Cilantro (optional)

Finely Chopped jalapeno (optional)

Mash avocados with a fork and add remaining ingredients. Stir together and salt and pepper to taste. Chill well and serve with tortilla chips.
