Mexican food recipes?

I want to have Mexican food for a party, cold and warm. Have you any ideas and recipes? And what kind of bread is eaten in Mexico?Mexican food recipes?
Churros



Ingredients: (Makes one platefull)

Vegetable or Olive Oil

1 cup water

1/2 cup margarine or butter

1/4 teaspoon salt

1 cup all-purpose flour

3 eggs

1/4 cup sugar

1/4 teaspoon ground cinnamon (optional)



Prepare to fry the churros by heating oil in a pan (1 to 1%26amp;1/2 inches) to 360 degrees F.



To make churro dough, heat water, margarine and salt to rolling boil in 3-quart saucepan; stir in flour. Stir vigorously over low heat until mixture forms a ball, about 1 minute; remove from heat. Beat eggs all at once; continue beating until smooth and then add to saucepan while stirring mixture.



Spoon mixture into cake decorators' tube with large star tip (like the kind use to decorate cakes). Squeeze 4-inch strips of dough into hot oil. Fry 3 or 4 strips at a time until golden brown, turning once, about 2 minutes on each side. Drain on paper towels. (Mix Sugar and the optional cinnamon); roll churros in sugar or dump the sugar on the pile of churros, like the pros.Mexican food recipes?

Here's my super easy Mexican Rice recipe:



1 box Goya Yellow (Spanish) Rice

1 can diced tomatoes with green chiles

3 ears corn, boiled and kernels cut off.



It's a pretty good side dish. I also like to serve refried beans with melted cheese on top with my Mexican food.



Also... Super Easy Guacamole:



4 avocadoes, mashed

1 jar of your favorite salsa

Cilantro to taste

A few tablespoons of lime juice

Sour cream (Optional-- more authentic recipes leave this out)
HABBI鈥橲 ENCHALADAS











INGREDENCES:

1lb. ground beef

1 pkg. enchilada seasoning

1 32 oz. can of diced tomatoes (drained)

1 4-6 oz. can of green chilies (drained)

1 med. onion chopped

2 cups of shredded mozzarella cheese (divided)

1 pkg. 8-10 large flour tortillas

1 16oz. jar of picante sauce



Pre-heat the oven to 350掳. Add aprox. 2/3 cup of the picante sauce to the bottom of a 13x9 glass baking pan. Brown the ground beef and onion then drain oil. Add the seasoning and cook according to the package directions. Add the drained diced tomatoes and chilies 鈥?heat thoroughly. Roll up the beef mixture and a small amount of cheese in each of the flour tortillas and place them seam side down in the prepared pan. Pour the remaining picante sauce over the enchiladas, cover and bake for 30 min. Remove from the oven, uncover, sprinkle the remaining cheese over the top and bake until the cheese is melted.

Serve over a bed of shredded lettuce and add a dollop of sour cream.Mexican food recipes?
What I do when having alot of people over,I put a roast in the crock pot and cover it with a can of diced tomatoes with chile's and some salsa and let that cook on low all day. it makes great meat for burritos or taco's.the meat is sooo tender with lots of flavor.it is always a hit! Don't forget the guacamole..... for a dessert, take flour shells and fry them and sprinkle cinnamen@sugar on them.Break them up like chips. so yummy:)
