I am having a mexican evening. I'm pretty good in the kitchen but am a first timer with Mexican food?

What suggestions do you guys have ? You don't have to post the whole recipe, maybe just what it's called and tips. Please keep in mind I live in South Africa, so I do not have the grocery stores most of you guys have.

Mexican Soup



1/2 lb. lean ground beef

1 medium onion, chopped

1 Can of diced tomatoes

1 small can of corn

1/2 jar mild salsa

1 Can of Chili Beans

1 C. Water



Brown beef with onion and drain. Mix all ingredients together. Do not drain

beans or corn Heat and serve. I double this and freeze half for later.
I would recommend making enchiladas, they are relatively easy and if your store does not have enchilada sauce you can make your own wit a few ingredients from your pantry. Here is a good site with some recipes

Try to find the cook book "Mexican Light Cooking" by Kathi Long. She has really straight forward recipes that are also healthy.
Fajitas are pretty easy.Just grill or pan fry veggies (onions,bell pepper,tomatoes) and wrap with warm tortillas.I am having a mexican evening. I'm pretty good in the kitchen but am a first timer with Mexican food?
