Does anyone have any really good mexican food recipes?

I am living with a guy and his 3 kids, I cook but not really a mexican chef if you know what I mean? Please help me with any good mexican recipes.Does anyone have any really good mexican food recipes?
how old are the kids, my kids dont like spicy or saucy.

enchiladas are always a hit, soft fry corn tortillas, cook and shred your favorite meat, grate cheese for inside and on top, canned sauce is the easiest, mix 1/2 the can into your meat and poor the rest on top. roll em up, bake em at 425 till all the cheese is melted, and youre done.

I make some in an extra dish without sauce, for my picky kids.Does anyone have any really good mexican food recipes?
Depending on their ages I'll bet you can get a package of ground beef, a taco seasoning packet, and some cheddar cheese.....and they will love it.

Unless of course they have Mexican heritage.....

Then they will know what good (real) Mexican food tastes like.

Kids love quesadillas. You can make them with either corn or flour tortillas. There's a little trick with warming the corn tortillas: just run each tortilla under cold water for a second. This way when you put it on the hot frying pan (or plata) it won't stick. Make sure you have your cheese grated and ready to put on the tortillas while they are warming. You can also add some chopped tomato, avocado, and/or salsa.Does anyone have any really good mexican food recipes?
Well is a lil bit hard with kids to make something really good and that is Mexican. Usually when they are a lil bit young..They like to have "caldos" or stews. You can have Chicken or beef..or just all together. But that really depends if where you live is a lil bit hot. You don't wanna be eating something that is hot when the weather is 102 f*!..hehehe

My husband's favorite meal that I cook is Potato %26amp; Cheese Tacos. They're easy and quick to make, and I'm sure the kids will love them, too. To make this even quicker, boil the potatoes a day before you prepare the tacos, since potatoes take about 30-40 minutes to cook. Just mash and mix them with the cheese and refrigerate it overnight. This recipe will probably make about 12 tacos. You will need to alter the recipe to make more. This is what you'll need:



3 medium potatoes, boiled and peeled

1/2 pack of Cacique ranchero cheese

1 pack of tortillas

1/2 - 1 cup oil

pepper %26amp; salt to taste



Condiments:

sliced lettuce

sliced tomato

sliced avocado

salsa



Boil the potatoes until well-cooked. Drain and let set in cool water. When they're still warm, peel the potatoes and place them in a big bowl. Crumble the ranchero cheese onto the potatoes and mash and mix together. Add pepper to taste. The cheese is already salty, but you may add more salt to the mixture if desired. Slice the lettuce, tomato, and avocado and set aside. In a medium-sized pan, pour 1/2 to 1 cup of oil and let it warm up on medium heat. Wrap 12 tortillas in a paper towel and warm them up for 50 seconds to a minute in the microwave. This will soften them for when you fold them into a taco. Add a tablespoon of the potato mixture onto a tortilla, and fold the tortilla in half. Spread the mixture evenly throughout the folded tortilla. Do this until you have about 4 tacos; you can prepare the rest as you are frying. Once the oil is warmed up, set the heat to high and fry 2-3 tacos at a time until they look golden-brown and crispy on both sides. Serve while hot. Each person can add the condiments to their own tacos as desired.
