Does anybody know any easy mexican food recipes?

In my spanish class we have to make different mexican foods to get a taste of the culture and I didn't want to make any tacos.Does anybody know any easy mexican food recipes?
Quesadillas!! Mexican Grilled Cheese Sandwiches!!!!



Two basic ingredients, flour tortillas and shredded cheese.......





You can add just about anything to it that you like, and top it offf with salsa........Hope this helps!!!

Mexican Sandwich



2 slices bread (white or brown)

1 container guacamole dip

mild picante sauce

corn tortilla chips

1 slice cheese



Spread guacamole dip on one slice of bread and picante sauce on the other slice. Crunch up some corn tortilla chips and place on sandwich for extra crunch. Add a slice of cheese and there you have an easy Mexican sandwich. You can add extra toppings such as lettuce or black olives if you like.





OR



Easy Empanadas





1 ready made pie crust

1 can of refried beans

1 jar of salsa

1/2 cup shredded cheese (cheddar or Monterrey Jack)



Roll the pie crust flat against a smooth surface and shape into a circle. Pour one large spoonful of refried beans in middle of rolled out pie crust. Pour one spoonfull of salsa on the beans. Then sprinkle cheese on top.



Fold the crust over, covering the beans, salsa, and cheese, into a half circle.Seal the edges with a fork and cook for 8-10 minutes in a 375F degree oven until golden brown.Does anybody know any easy mexican food recipes?
Here is a super easy one. I love taquitos with guacamole.



Canned roast beef is shredded and used in these corn tortillas, which are rolled up and fried. Use them for a main dish or as appetizers.



Ingredients:

1 can Libby's roast beef, drained

1 dozen corn tortillas

1/2 onion, diced (optional)

Toothpicks

Oil for frying

1 container sour cream

Guacamole

Directions:

Drain off gravy from can. Place meat in bowl and shred it; add onion if desired, mixing well. No need to heat, meat is already cooked. Next heat tortillas till soft, stack on a dish. When all tortillas are warm, start putting a strip of meat on tortilla, roll tightly and hold securely with a toothpick. Keep repeating till all meat is used. Next heat oil in a 10" frying pan; use enough to cover taquito at least half way. Make sure oil is hot enough. Add taquitos to oil and heat about 3 minutes per side until crisp. As you remove each one hold taquito side ways over pan to let excess oil fall back in pan. Place on a paper towel-lined rectangular pan, then cover with foil to keep warm. Serve with sour cream and/or your favorite recipe of guacamole.

fry up ground beef in a pot, drain fat, then put meat back into pot

add diced onion

salt. pepper

add once can of rinsed and drained Red Kidney beans

add one large can of tomatoes

add 3 tbsp. chilli powder,

stir to combine all ingredients...Bring to boil, stir again, put lid on, lower heat to simmer (low setting) for about an hour~...Serve with rice....or nacho chips, loaf of italian bread

you can also add a couple of drops of tobasco sauce* to spicen it up some

Spanish ppl enjoy Chilli and nachos with grated cheese*
