Authentic mexican cheese dip like they serve in mexican food resturants?

I'm making a mexican food meal tonight and I want to make a cheese sauce for chips like whta you actually get in the resturants. I DO NOT want one made with Velveeta cheese. I know that out local resturant uses canned cheese but I'm not sure what kind or what else they use. chihuahua cheese or quesadilla cheese, its the real stuff, its also a whiteish color, it can be hard to find but check kroger or a meijer if you have one around. Yum this is making me hungry thinking about it!

that helps alot. now i know exactly what to look for! does it come with directions or is there a certain way to fix it besides melting the cheese?
