Authentic mexican cheese dip like they serve in mexican food resturants?

I'm making a mexican food meal tonight and I want to make a cheese sauce for chips like whta you actually get in the resturants. I DO NOT want one made with Velveeta cheese. I know that out local resturant uses canned cheese but I'm not sure what kind or what else they use. Can anyone tell me what the recipe is??Authentic mexican cheese dip like they serve in mexican food resturants?
chihuahua cheese or quesadilla cheese, its the real stuff, its also a whiteish color, it can be hard to find but check kroger or a meijer if you have one around. Yum this is making me hungry thinking about it!

that helps alot. now i know exactly what to look for! does it come with directions or is there a certain way to fix it besides melting the cheese?

melt different kinds of cheese and add chopped green chile
