What seasonings "make" Spanish and Mexican food?

I am wanting to make a spice garden, so don't recomend any multipurpse seasonings in a jar (though it would be helpful untill the garden is planted.)What seasonings "make" Spanish and Mexican food?
all those answers are good so I'll give a few I noticed missing....

-limes mexicans use it a lot more than lemons

-epazote- its a leaf you add in soups for good flavor.

-green tomatoes (its a different variety than the reds) good for green enchiladas

-safron is used to season rice a lot and to give it color.

Cilantro (an herb garden would be the appropriate term).

Chili peppers: piquines or habaneros are good, but might as well add serranos and poblanos for completeness

purple crocus flowers (this is where saffron comes from)

Potato weed (galinsoja parviflora)

lemon verbena (the best herbal tea in the world!)
Cumin is a must have!

(as is chili powder and cilantro, as previously mentioned)

Why are Indian Americans so obsessed with Mexican food?

I swear every time I go to an Indian friend's house there is always Nachos and Tacos for appetizers. What up with that?Why are Indian Americans so obsessed with Mexican food?
I've often wondered the same thing. My family is Indian and we love it (most of us, anyway, my dad pretty much doesn't like anything that isn't Asian food or a steak).



Some theories I have:



1) Many Indians immigrated to the Southern areas of the US, where this kind of food is available

2) It's spicy! You'll often hear Indians describe typical "American" food as bland, and even sometimes tasty, flavorful but not-spicy cuisines will be dismissed as "bland".

3) There are some similar aspects, like the presence of rice and beans (rice and dhal, anyone?), tortillas (a lot like roti), pico de gallo (like kachumber)

4) Again, it's spicy, I think that is a BIG reason

5) And A BIG, BIG REASON: It is pretty darn cheap. I say this as a person from the Indian community, we are a frugal people. You can get a lot of Tex-Mex for very little money

6) If you see them eat this a lot whenever you're over there, and you're not Indian, it could also be that they're feeding you something that they THINK YOU'LL LIKE. A lot of Indians don't think that non-Indians really like Indian food.Why are Indian Americans so obsessed with Mexican food?
Well... funnily enough, I come from the UK where Indian cuisine (I'm assuming you mean Indian as in India, not as in Native American) is extremely common- as in, curry is one of the most popular dishes in the nation and there is a large population with Indian roots. My fiancee is from the US- specifically California, where Mexican food is very popular, but there is only a relatively small Indian population and Indian food is much less common. I've come to think of Mexican food in the US and Indian food in the UK as more or less equivalent- they're both known for being spicy, appeal to a large immigrant population and occupy similar cultural roles as favourite 'foreign' foods.



And more to the point, my observation is that if you like one, you will probably develop a taste for the other. So maybe that explains it.



Or maybe that family just happens to like Mexican.

WELL, IM MEXICAN AND I THINK WE ARE RELATED TO INDIANS ANYWAYS IT'S BECAUSE THATS THIER RACE AND THEY WERE FED THAT SINCE THEY WERE SMALL
They like it. It has almost the same exact spices as Indian food. Cilantro, cumin, chile, etc.
it doesnt mean that EVERY INDIAN AMERICANS love that! may be just your friends!

Ground beef, taco seasoning, onions, garlic. Saute all in a pan until ground beef is no longer pink. You can put this on anything like tostadas, nachos, put the meat in with velveeta cheese and a can of diced tomatoes and chiles and you have a cheap cheese dip. Get corn tortillas and cheese and a can of enchilada gravy. Fill the tortillas with shredded chicken or ground beef. Cover with enchilada gravy and cheese. Cheap and easy: Picadillo, arroz con pollo, tortilla soup, (even my sister can make tortilla soup, so it must be easy. Fideo is dirt cheap, and easy to cook. Pinto beans cooked with bacon or ham hocks. You can do a search for these items I listed, they are on the internet.



(PS white people Mexican food like "hamburger helper enchiladas" sounds really bad to me, the real thing is cheap and pretty easy - check out a good cook book from the library.)

You coulld do cuacamole?you need tomatoes,chiles,avocado and mix it together?
salsa,- onion, tomato, cilantro, lemon juice and a jalapeno.

guacamole- avocados, tomato, onion, garlic, a little lime juice and salt. jalapeno, optional.

fried tortilla chips- corn tortillas, cut in triangular shapes, fry in oil. medium fire.

chicken breast, stewed in onion, cilantro, and sazon seasoning. cool off, shred into pieces and serve in flour tortillas.

jarritos- Mexican soda comes in many flavors. can be purchased in many food markets.

This is really good and easy. Buy Hamburger Helper, Enchildada. Make it as directions say. Warm tacos and burritos shells, and put a helping of Hamb. Helper Enchilada on with shredded lettuce, chopped tomato, shredded cheese, and any other topping you like. Don't forget the sour cream! This is easy and delicious.

This way, you can eat with those dining with you without being tempted to load up on chips.



For your meal, avoid fried, cheese soaked, or greasy dishes and instead go for something lighter, like Caldo, tortilla soup, fajita salad, fish, or chicken fajitas for a good source of protein (and fewer calories). Eat black beans, not refried or pinto, and corn tortillas if you can stand them.

You can also do a "naked burrito" (which is just a burrito without a tortilla) with a grilled, seasoned chicken breast, tomato, lettuce, fat-free refried beans, fat free cheese, and fat free salsa. If you really want a tortilla though, you can alway look for Lawash bread, it's a really low carb/ low fat tortilla (great for wraps). No offense to mexicans but, I think just about all of it is fatty, except taco salads, and platanos(plantains). I'm black and we cook basically the same, we use lots of grease and oil, and we fry almost everything, so all you can do is just eat less mexican food. And change your extras: when you have a borritto have a water, and a salad with it, instead of soda and rice. This stuff should help.
its not about what fattening or not, it's about whats healthy or not. you could chose between a low fat yogurt or a nutritious slice of beef. you would be 100% better of eating the beef becuase its a lot more nutrious filled with iron and protein, secondly humans weren't made to eat dairy, it was meat and vegetables, therefore this leads me to saying a Medditeranean diet is the best. The medditeranean have the lowest percentage of cardiovascular disease in the world, disease isn't as frequently seen as in the uk all due to there diet.I love Mexican food, but I'm trying to lose weight. The best is to have a tea spoon of honey, daily in the morning once u get up from bed. this burns the extra fat. after some time, have atleast 2 glasses of water, to clear the acidity produced during the night



make sure the honey u purchase and use is natural and authentic. This method has worked for me and is really efficient. Ideally to see a noticible difference, it will take atleast 3 to 4 months...

Make taco salads with chicken and use salsa as the dressing. Never eat spanish rice because it is as fattening as steak. Switch to mexican seafood items but avoid the ones with cream sauce.
