What is an easy to make mexican food recipe?

i need help with mexican food. my cousins are coming in from mexico city and i want to send them back to mexico in their mindsWhat is an easy to make mexican food recipe?
I love making Mexican..cuz it's so easy!!okay there's stuffed pepper (I think it's Mexican) take a green red yellow or orange pepper and hollow it out then put in rice ,chicken peices, jalape帽os (if you like them) cheese,mushrooms etc etc what ever you want.Or Chicken Quesedillas or a taco bake (old el paso) there's so much!!!!Google it!!What is an easy to make mexican food recipe?
Quick and Easy Mexican Chicken

Ingredients

4 skinless, boneless chicken breasts

1 cup salsa

1 cup shredded Cheddar cheese

1 clove garlic, minced

1 pinch salt

1 pinch ground black pepper

1 pinch ground cumin

Directions

1.Preheat oven to 375 degrees F (190 degrees C).

2.Heat a greased skillet to medium. Rub chicken pieces with garlic, salt, pepper and cumin to taste and add to hot skillet. Cook until brown on both sides and no longer pink (10 to 15 minutes).

3.Transfer meat to 9 x 13 inch baking dish or casserole dish, top with salsa and cheese and bake at 375 degrees F (190 degrees C) for 15 to 20 minutes (until cheese is bubbly and starts to brown.) Serve over rice or buttered noodles.
tostadas are pretty simple. its like a flat taco. you can put anything you want on it. you can purchase the tostadas in the store, or you could deep fry corn tortillas for a more authentic taste. on my tostadas, i like shredded chicken (seasoned with salt, pepper, mexican oregano and make a sauce from boiling tomatoes, onion, garlic and half of a jalapeno. puree it in the blender then pour over chicken and cook), shredded lettuce or cabbage (i prefer cabbage with chicken), mexican crema (almost like sour cream, with a thinner consistancy) and beans. i suppose you could also add tomatoes and olives and stuff like tacos, but that's not really authentic. serve with mexican chile sauce (I like valentine picante sauce. it isn't too hot.)



OR you could do something even easier and do esquites. Its like, a cup of corn with mayo and seasonings. There are plenty of esquite recipes online. Find one that you like.

Total Time: 30 minutes

Ingredients:



* 12 corn tortillas

* 1 28oz can of red enchilada sauce

* 2 cups (16 oz) mozzarella or queso blanco

* 1 1/2 cups meat (optional) shredded beef or chicken

* 2-3 tablespoons oil



Preparation:

Coat each tortilla with oil using your hands or a brush. Spread out on a cookie sheet or baking dish and bake in a 500 degree oven for about 7 minutes. Take out to cool until they are warm to the touch.



The cheese can be shredded, or just cut into slices 3-4 inches long, and 1/4 inch thick. (Or thicker if you like them really cheesy.)



Pour just enough sauce in the bottom of a 9x13 glass baking dish to cover the it. Pour the rest of the sauce in a large bowl. Dip tortillas, one at a time, in the bowl to coat with sauce.



Lay the tortilla in baking dish and if you're using the meat, put in about 2-3 tablespoons. Place the cheese on top of the meat. Fold one edge over the cheese, then the other one, then turn the whole thing over, folded side down, in baking dish. Repeat for each tortilla. Sprinkle any leftover sauce and/or cheese on top of enchiladas.



Place in 400 degree oven for 15 minutes or until cheese is melted.
I would not attempt to make authentic Mexican food for someone who is from Mexico or who has traveled extensively there. if I understand the cousins are coming from Mexico. I would rather give them some more regional/local tasting foods from my area.What is an easy to make mexican food recipe?
