ok im hispanic (not mexican) and here in NM most people are hispanic not mexican (long story) and most of us dont want any illegals here they give hispanics a bad name especially since they believe if you are hispanic then you are pro illegal. which most arent. oh yeah New Mexican food is waaaayy better. it has some mexican attributes but alot of native american and spanish stuff too. its like mexican food with an american twist.How many Mexican americans like Mexican food ?
the mexican americans i know don't eat much mexican food. and they feel we need the wall to help slow down the illegal invasion. there are mexican americans who are minutemen. aztlan can not have those states, if they try to take them there will be a fight. aztlan and aztec are the same. the aztec was in mexico city, mexico. if they are wanting aztec, aztlan back they need to go to mexico and get it.

I do enjoy eating mexican food...but it's not my preferred choice, and yes i do like TAco Bell and all that good stuff.

i'm against buliding the wall because it's stupid. i mean, Bush and all his buddies can build the wall if they want, but the mexicans and other south americans WILL find a way to get around it, under it, or above it.

Seriously, I wouldn't worry we all get that way, some have a fixation for Italian, Asian, in your case Mexican, I have had cravings before for Bacon and eggs for Breakfast, lunch and supper and or Pancakes. Nothing to worry about girl. Here is a tip for you, every time you get really hungry like that, have a glass or two of water about ten minutes before you eat something.

    Enchiladas, burritos, tacos, chile (without beans), flautas, fajitas...my husband is from San Antonio, TX which has a 50% Latino population from Mexico. If you go into a Mexican restaurant down there, those are the foods you'll be served.
    I live in Mexico City so we have restaurants with regional food from all over the republic, have you ever tryed ants eggs (mmm) maguey worms, huitlacoche ( black corn) pumpking flower soup or quesadillas, tlacoyos azules (blue corn filled in with chopped pig skin or beans) amaranto with honey called alegrias its a seed full of proteins very good. Every region has its own version of tamales in the north the have them thin and small, in center we have them medium size but in south they even put a hole chicken leg on them. We also eat nopales (cactus) Tuna wich its the cactus fruit, very sweet juicy and full of seeds.
    You really need to research this subject as some people can come up with some really crazy ideas. Only one thing I can say is that I have never been able to get any decent Mexican (or Tex-Mex) food north of the Mason-Dixon line.

    The problem with the question is what is authentic to Mexico covers an area that ranges from rich coastal fisheries, to lush jungle, to desert ecologies where just about anything is eaten.
    I live on the border and we don't eat grasshopper or pigs feet. My crazy white southern relatives eat pickeld pigs feet. Where'd you hear that abot mexican food?

    I'm lucky enough to live in Chicago. We have a huge Latino community here, so Authentic Michohuacan or Destrito Federal style cooking is easy to find, so are authentic Puerto Rican Restaurants.



    I'd recommend Menudo, a pepper pot like tripe soup. Also good is Seviche--a marinated fish and shrimp dish served like a relish, And Pastor--a kind of barbecued pork. Pickled carrots, with jalapenos, pickled garlic and cauliflower is pretty tasty too.

Sounds like the best tortilla ever.Oh the historic South American's also used artichokes, sweet potatoes, beans and squahes, potatoes, avocadoes, pepper, corn, cocoa, manioc, blueberries, cranberries, tobacco, turkey, venison and fish of all kinds.     Umm i've never herd of not eating soft cheese while being pregnant. I think you would be ok this one time, but you'll know after you eat it because you might get a put set stomach, or maybe your baby wont like it and u'll throw it up. it all depends on if your body can handle it. Or if you are trying to eat healthy food for the baby I would stick to chicken at the mexican places.

    That isn't in a tortilla. And that isn't a dessert either but a main dish and very tasty. And not tamales either okay.What kind of Mexican food can I make?
    Pollo (chicken) a la Plancha Or Steak a la Plancha. Both are easy to make. Plancha just means you are gonna flatten it out. For the chicken you get a boneless chicken breast and cut it lengthwise and open it like a butterfly. Pound it out alittle and season with salt and pepper. Have a griddle ready or a large pan on High Heat. Pour alittle oil on the bottom and place chicken in pan and have something heavy to press down on it. Just cook for about 3min on each side. Remove from heat and add sliced onion, and sliced fresh jalape帽o peppers to pan with alittle water just to scrapped the bottom of pan. When onions are translucent pour everything over the chicken and add your favorite mexican blend shredded cheese on top. Sides suggestions: Mexican rice and beans. Yum!!!     The mexican food you can make is Traditional mexican chicken enchiladas recipe, for making this recipe we needs,



    Ingredients:



    1) 12 corn tortillas

    2) 3 cooked chicken breast halves, no bones or skin, shredded

    3) 陆 cup chopped green onions

    4) 陆 cup chopped fresh cilantro

    5) 2 cups chicken broth

    6) 1 cup sour cream

    7) 戮 cup minced onion

    8) 12 oz shredded cheddar cheese

    9) 4 oz chopped green chilies

    10) 录 cup butter

    11) 录 cup all purpose flour

    12) Vegetable oil for frying



    Preparation:



    Preheat the oven to 375潞F. Heat 2 tablespoons of oil in a large frying pan over a medium high heat, and then fry the tortillas on 5 seconds per side until they are pliable. Do them individually and add more oil as required. Drain the tortillas on paper towels and keep them warm.



    Divide the chicken, onion (not green onion) and 10 oz of the cheese between the tortillas. Roll them up and place in a greased baking pan, seam side down. Melt the butter in a pan over a medium heat. Add the flour and whisk until it begins to boil. Add the broth, stirring continuously.



    Add the chilies and sour cream. Stir occasionally and do not let the mixture boil. Pour this mixture over the enchiladas when hot and thick. Bake the Mexican chicken enchiladas for 20 minutes then top with the rest of the cheese and bake for a further 5 minutes. Use the green onions and cilantro to garnish them.
    Pollo con mole is one.

    Pollo con arroz is another.

    Pescado prito and siete mares are both very popular.

    Camarones a la diabla and camarones cucarachas are both good.

    Camarones al mojo de ajo is worth trying.

    The best mexican food (and the most authentic) is in California. I've been to Arizona and New Mexico, and the mexican food is horrible. I think that they say they are real is because they use fresh ingredients and they don't fry it (American Style).

    Mexican food in Kansas - what the heck is up with the salsa?

    I've been to a couple of Mexican places in Kansas City and the Salsa is always like diced tomatos with basil and other stuff. It is more italian than mexican. It has no kick to it at all. I went to one place and asked for hotter salsa, the waitress brought what seemed to be picante sauce with vinegar mixed in. It wasn't hot just sour. When I told her I was leaving and not eating there because the salsa wasn't salsa she got all bent - I think she actually believed it was good salsa. WTF???? I know that Kansas is a long way from Mexico but you can still buy Old El Paso and other brands of salsa in the stores! Why don't these tards realize that diced tomatoes is not salsa!!!?!?!?!?!?Mexican food in Kansas - what the heck is up with the salsa?
    Yeah i hate the salsa in most places. But i do like a couple places. Check out one the border first, as they have the best salsa and they give you free chips salsa and free soft tortillas. Then next check out jose peppers. Thay also have good salsa.

Keep going until your mixture and your tortillas are gone, lining up each enchilada next to each other so they will not unroll. Pour a can of red enchilada sauce over the enchiladas.     1 (14 1/2 oz.) can Del Monte Mexican-Style Stewed Tomatoes

    1 tsp. oregano

    1 tsp. chili powder

    1/2 tsp. ground cumin

    1/4 cup chopped cilantro (parsley)

    1 (7 oz.) can whole green chiles; drained and cut into strips

    8 flour tortillas; warmed



    Score chicken on both sides. In blender container, combine tomatoes, lime juice, jalapeno, garlic, oregano, chili powder and cumin. Cover and blend thoroughly; stir in cilantro. Reserve 1 cup sauce. Pour remaining sauce over meat; cover and marinate in refrigerator several hours or overnight.

    Skewer onion slices lollipop style; brush with oil. Grill onion and chicken as desired. Thinly slice meat across the grain.     I make killer spicy chili with hand-diced chuck roast which is browned with garlic in a frying pan. Then I throw in a palmful of chili power, alittle salt, about a half-palmful of cayenne pepper, a can of diced tomatoes, a can of potatoe paste, a whole Spanish onion, green peppers, cook real slow at simmer. The longer you cook it the hotter it gets!! Then when it starts to first simmer, throw in a palm full of yellow flour to thicken the sauce (mmmm), cook for hour or so, then throw in a can of red kidney beans and more onions--cheese is an option, too, and WALLAH, serve with Spanish rice and flour tortillas. (Mmmmm, the best!!) I use pinches, smidgens, and palm fulls and do it to taste. Forget the old measuring cup, that's no fun at all. As for burritos marinate the chicken or beef slices in rotell, tomatoe sauce. Then cook it on a grill, serve w/onions, refried bean, green/red peppers inside a flour or corn tortilla.     Get a box of beans, whichever you fancy, unsalted, in water. Drain it. Chop onion and garlic. Fry it until golden. Add minced meat, or Quorn, or whatever you want to use. Add some water, put in the spices. Add a little chili if you like it really spicy. Add the beans, and mushrooms if you like it. Leave for a few minutes.

    Rolled beef tquitos with a spicy guacamole? Cooke flank steak in water with "Chef Merito" steak seasoning, 3 whole garlic and a few bay leaves. Cook for a couple of hours, once it is ready, take it out of the water and let it cool down. Finely chop onion and saute it with a little bit of oil, shred your beef and add it to the onions, add salt, pepper, and garlic to taste. If it looks a bit dry, try adding a bit of the water that it was cooked in. Get corn tortillas and add a bit of the beef mixture to the middle, roll the taquitos and secure with toothpicks. Once they are all rolled heat up oil in a large pan, once the oil is ready drop the taquitos, in the oil a few at a time until they are slightly golden. Let them drain over paper towels. For the guacamole, add, avaocado, jalapeno (with seeds) tomato, onion, cumin, salt, pepper, minced garlic, chile powder and a squeeze of lime, mix it all together. (Tip: to keep the guacamole from browing - throw on the the large avocado pits into the finished mix) Good luck!

Be adventurous and taste the local cuisine, you will always be pleasantly surprised, and always ask for the degree of hot or picante so that your dish won't be uneatable.

    ABSOLUTELY!!!!! It is not even close. Mexican restaurants in the U.S. cater to American's version, or their concept of what Mexican food should be like. I find it quite bland and unappealing. I've talked to restaurant owners who state that they would lose business if they tried making and selling food as it is made in their country. Instead, they fill their menus with the typical and expected fare...i.e. chimichangas, tacos, tamales. The same stuff as the next Mexican restaurant. Cheese on top of tortillas, with lettuce and tomatoes on the side. Try ordering "tacos de lengua" next time u visit ur local "mexican" restaurant. Or "tacos de cabrito". There are so many delicious dishes that just don't sell in the USA because we Americans are used to the same items on the menu. Try an authentic, and I mean authentic, restaurant next time. It probably means going deep into the barrio, but it might be worth your palate.

    I have personally search in Paris, Rheims, Tours, Angers and, Nice for mexican food ingredients. Many phonecalls and internet searches have been made trying to find it. It does not exist. Barrio Latino restaurant is OK. YOu can buy pozole and other authentic mexican dishes.

    Besides in Spain, it is known that they are not exactly too friendly with people from Central and South America. Most will blatantly be straight-off racist with you. I can't say this for myself, but I know many people who experienced this treatment personally. The insults were so bad for some of my dear friends that they couldn't take it anymore and had to leave.

If you don't live near her or have a close relationship with her, then Rick Bayless has a wonderful cookbook called Authentic Mexican regional cooking from the heart of Mexico.



    It is not Tex-Mex, it's authentic Mexican. You might try checking Amazon.com for a less expensive copy of the book than going to regular book stores and paying the full price.

    Authentic Enchiladas Verdes



    1 bone-in chicken breast halves

    1 cup chicken broth

    1/8 white onion

    1/2 clove garlic

    1 teaspoon salt

    1/2 pound fresh tomatillos, husks removed

    2-1/2 serrano peppers

    1/8 white onion

    1/2 clove garlic

    1/2 pinch salt

    6 corn tortillas

    2 tablespoons vegetable oil

    1/2 cup crumbled queso fresco

    1/4 white onion, chopped

    1/2 bunch fresh cilantro, chopped



    1. In a saucepan, combine chicken breast with chicken broth, one quarter onion, a clove of garlic, and 2 teaspoons salt. Bring to a boil, and then boil for 20 minutes. Reserve broth, set chicken aside to cool, and discard onion and garlic. When cool enough to handle, shred chicken with your hands.

    2. Place tomatillos and serrano chiles in a pot with water, enough to cover them. Bring to boil, and continue boiling until tomatillos turn a different shade of green (from bright green to a dull, army green). Strain tomatillos and chiles, and place in a blender with another quarter piece of onion, 1 clove garlic, and a pinch of salt. Pour in reserved chicken broth, so that liquid just covers the veggies in the blender by about an inch. Blend all ingredients until they are completely pureed. Pour salsa in a medium saucepan, and bring to a low boil.

    3. Pour oil in a frying pan, and allow to get very hot. Slightly fry tortillas one by one in hot oil, setting each on a paper towel afterwards to soak some of the oil. Finally, dip slightly fried tortillas in low-boiling green salsa, until tortillas become soft again. Place on plates, 3 per person.

    4. Fill or top tortillas with shredded chicken, then extra green sauce. Top with crumbled cheese, chopped onion, and chopped cilantro.

    115 g butter, softened

    85 g cream cheese

    125 g sifted all-purpose flour

    315 g fruit preserves

    65 g white sugar

    1. DAY BEFORE: Cream butter and cream cheese together until smoothly blended. Beat in the flour. Shape dough into a smooth ball, wrap in foil or cling wrap, and refrigerate overnight or up to a week.

    2. AT BAKING TIME: Remove dough from refrigerator 30 minutes before using. Start heating oven to 375 degrees F (190 degrees C).

    3. Roll chilled dough thin. Cut with 3 or 4 inch round cookie cutter. Place small spoonful of jam in center of each round, moisten edges with water.

    4. Fold round over and press edges together. Bake on ungreased cookie sheet 15 to 20 minutes. Immediately roll in sugar mixed with cinnamon (traditional) OR in confectioners' sugar if preferred.

    185 g uncooked long-grain rice

    6 g garlic salt

    1 g ground cumin

    40 g chopped onion

    120 ml tomato sauce

    475 ml chicken broth



    1. Heat oil in a large saucepan over medium heat and add rice. Cook, stirring constantly, until puffed and golden. While rice is cooking, sprinkle with salt and cumin.

    Mexico is a huge country and the cuisine varies by region. Some recipes are heavy on seafood and others feature beef. Either way, true Mexican food does not get served with a ton of melted cheese, sour cream and shredded lettuce - that's the Americanized version of it. A lot of true Mexican foods take hours to prepare.



    Pulled Beef Enchiladas



    Start early in the day, because you have to cook a beef roast and then shred it.



    1 pound round steak

    2 large cloves garlic, crushed

    1 medium onion, halved and thickly sliced

    1/2 teaspoon freshly ground black pepper

    1 tablespoon chili powder

    1/2 cup beef broth

    3 cups enchilada sauce

    10 (9-inch) corn tortillas

    Grated cheddar or Monterey Jack cheese, to garnish

    Shredded lettuc, to garnish

    Sour cream or nonfat yogurt, to garnish





    Preheat oven to 300 degrees. Cut round steak into pieces that will fit snugly into a casserole with a lid. Strew about the beef the garlic,onion, pepper and chili powder, and pour the beef broth over all. Cover the beef with aluminum foil and then the casserole lid, and place the casserole in the preheated oven.



    Let the beef cook, checking it once or twice to be sure the broth has not cooked completely away, for 2 1/2 to 3 hours. The beef is done when it is exceedingly tender to the fork, falling apart as you prod it. Remove the beef from the cooking juices and set it aside to cool.



    Strain the cooking juices, discarding the solids reserving the broth. Set the strained broth aside.



    When the beef is cool, shred it by pulling at it with two forks. Moisten it with the reserved broth and, if desired, refrigerate it for up to 2 days before proceeding with the next step. About an hour before you serve the enchiladas, preheat the oven to 350 degrees.



    Pour one cup of enchilada sauce in a small, heavy, nonstick skillet. Heat it over medium-high heat and soften tortillas by passing them briefly through the hot enchilada sauce, draining them well before laying them on a brown paper bag or mat of paper towels. Continue until all the tortillas are softened. Spray 9-by-13 inch baking pan with nonstick spray. Spread about 1/2 cup or so enchilada sauce in the bottom of the pan.



    Remove the reserved meat from the refrigerator and fill the tortillas by spooning a tablespoon or two of the meat into the bottom third of a tortilla, rolling it like a cigar and placing it seam-side down in the baking pan. Continue until you've filled all the tortillas; you may have some beef left over. Now pour enchilada sauce over filled tortillas until they are very nearly covered, tipping the pan to make sure the corners are well moistened. If you have beef left over, spread it over the top of the enchiladas.



    Bake until the enchilada sauce is bubbling hot, about 30 to 45 minutes. Garnish each serving with shredded lettuce, grated cheese, sour cream or yogurt and salsa.

    If you want to venture a bit to Chicago, Tio Luis Tacos has the best Mexican food ever. My reccomendation: chips and salsa, three avocado tacos, sopapillas, and of course a pineapple juice. Can't be beat!

Use V-8 or water mixed with a bit of tomato sauce for the water and cook as you would any rice)

    Mexican rice is good. I always think corn goes great with Mexican food (maybe because of corn tortillas :-)). Or get a jiffy muffin mix, but instead of mixing it with milk, add picante sauce. Bake as directed and you have Mexican cornbread.

    There is a place in Anaheim called El Nopal, they have a good variety of mexican food. I think the items you've listed are a different type of mexican food so your not going to find them all in one place. For Carnitas there is a place in Fullerton called Carnitas Uruapan which are very good, and tamales de iguana? I think that's a specialty you'd have to make at home. Sopes can be found in placentia in a place called Q Tortas or El Farolito. You have to look around.
    Well, Baja California Norte or Baja California Sur would be suitable, I think.

    Best Burritos Ever鈥?br>
    1 lb. hamburger

    1 can refried beans with lime

    4 little cans chopped green chilis

    1 Tbsp. Cumin

    Sharp cheddar cheese

    1 pkg flour torillas

    Sour cream (optional)

    Salsa (optional)



    Brown the hamburger. Drain the grease. Combine the beans, chilis and cumin. Cook until hot. Put 1/4 cup cheese in tortilla and microwave for 20 seconds. Fill with meat mixure and sour cream and salsa. Fold. Enjoy.

    The Tortilla Factory in Scottsdale was really good. If you like tequila they have over a hundred different kinds (i think, its a lot) and the margaritas were oh so yummy.     If you are looking for authentic Mexican food and not an over marketed chain restaurant go to Tacos Jaliscos. When I go there I feel like I am in Mexico, my boyfriend is Mexican and is the one who showed it to me. It is delicious and made fresh. It is also incredibly inexpensive.     Just drive south a little more and there you will find Mexico!!!
    ok. Find yourself a "filibertos" "Los Rubios" "Fredericos" anything with an "os" at the end..the ones where they run in what used to be old fast food chain buildings (old wendy's or jack in the box etc..some though are really small and are only a drive through) they look terrible but they have hands down the BEST mexican food..i kid you not.



    (i really like the super nachos..amazing.. nachos with guacamole, sour cream, refired beans, pico de gallo and carne asada that is to die for...and their carne asada burritos are AMAZING too...they also sell chimichangas and tostadas and stuff like that..but they server horchata as well (its a mexican rice drink that is AMAZING as well but its a either you like it or you dont drink) and they have the home made tortillas too. and most of them have a drive through if you want to just bring it back to the hotel. i suggest grabbing some green sauce though...its so good..i know for sure filibertos has it. their quantities are big though. they dont cook it till you get there and its real meat...not stuff like mcd's burger patties or anything.





    P.s i mapquested the nearest one to you...its not THAT far..its 11 miles from your hotel but its a really nice one..brand new and built for filibertos...i've been to that one several times. its a straight shot only like one turn from your hotel to there.

    Your best bet is to hire a caterer separately from the banquet hall. Most caterers will do Mexican fare or you can go directly to a Mexican restaurant. I love Maria's in Torrance and Hacienda in Westchester.
